Shangri-La Jakarta is delighted to announce the appointment of Chef Paolo Cola as the new chef de cuisine at Rosso, the hotel’s acclaimed Italian dining destination. With over 20 years of culinary experience across Europe and Asia, Chef Paolo brings with him a deeprooted passion for Italian gastronomy, blending timeless traditions with contemporary flair and a forward-thinking approach to sustainability.

 

Hailing from Cesena, in the culinary-rich region of Emilia-Romagna, Chef Paolo began his journey into the kitchen at an early age, growing up in a family of passionate cooks. His mother and grandmother were both cooks, and his uncle a renowned pastry chef. Inspired by his roots, he pursued culinary education at a prestigious hospitality institute in Forlimpopoli, where his professional journey began.

 

Throughout his career, Chef Paolo has worked in award-winning fine dining restaurants, luxury hospitality settings and high-volume culinary operations. He has gained extensive knowledge in traditional Italian cooking while embracing modern techniques. He has also undertaken advanced culinary training and thrived in high-pressure environments, where his innovative style and leadership have earned him multiple accolades.

 

At Rosso, Chef Paolo brings a vibrant new perspective combining authentic Italian traditions with modern innovation. “My philosophy is to honour Italian heritage while embracing evolution. I focus on premium seasonal ingredients, sourced locally whenever possible, and I’m deeply committed to a zero-waste kitchen culture,” said Chef Paolo. “I believe that every dish tells a story not just of the chef, but of the farmers, the producers and the land.”
