
Acclaimed London-based chef Edoardo Pellicano, best known for earning a Michelin star at Maös in London, makes his Southeast Asian debut with a limited-time tasting residency at Charkoal.

Recognised for his soulful, fire-led approach to cooking, Chef Edoardo brings a refined philosophy shaped by years in some of the world’s most progressive kitchens, including Noma, Viajante, and Portland. This three-month residency is not just a showcase of his culinary finesse but a deeply personal journey into new terrain — cultural, ecological, and creative.
“Indonesia is a country I’ve long been curious about,” says Edoardo. “Not only for the food, but for the richness of its biodiversity, its native ingredients, landscapes, and people. The idea of working with fire here felt like a natural next step.”
His menu for Charkoal is a result of months of exploration, collaboration, and discovery. Edoardo has spent time connecting with farmers, foragers, artisans, and food historians, most notably through the guidance of Helianti Hilman, a renowned advocate of Indonesia’s agricultural heritage. In Muara Jambi, he encountered risi shoots and Mayan bamboo, typically harvested only after two years but found by rare chance at their peak. Each element reflects a commitment to timing, place, and process.

This is not fine dining in the traditional sense. The dishes are thoughtful, sometimes restrained, always elemental. Techniques are led by flame, embers, and smoke, honouring both the raw material and the energy that transforms it.For Ismaya, this residency reflects a broader ambition: to elevate Jakarta’s standing on the global culinary map. Despite its rich diversity, Jakarta remains overlooked by international accolades. By inviting boundary-pushing chefs like Edoardo Pellicano, Ismaya hopes to foster inspiration within the local culinary community, ignite meaningful collaboration, and demonstrate that Indonesia’s talent and ingredients can rival the world’s best.
Charkoal, Ismaya Group’s culinary atelier for elemental cooking and craft, now hosts its most ambitious collaboration to date. The space has been reimagined for the residency, with custom plate-ware, new hospitality rituals, and ingredient sourcing practices introduced to reflect Edoardo’s philosophy.
A notable partnership has also formed with Aristamontana, an organic regenerative farm in the mountains of Bogor, which supplies spring water to the kitchen and dining room. The water is not commercially bottled and is served with purpose: to cook, to cleanse, and to connect. All proceeds from this partnership go towards forest restoration and biodiversity programmes through the Paseban Foundation.
This residency signals more than a visiting chef. It is a collaboration grounded in respect for nature, for craft, and for culture. It represents what Charkoal and Ismaya hope to cultivate in Jakarta’s dining scene: a place where provenance matters, and the story behind each plate is as compelling as its taste.
