Chef Chong Kok Leong, a native of Malaysia, brings over 20 years of experience in prestigious kitchens across Singapore and Indonesia. Before joining Royal 8, he perfected his craft at a renowned Chinese restaurant in a luxurious 5-star hotel in Jakarta, earning recognition as a true master of Chinese cuisine. For Chef Leong, cooking is more than a profession—it is a way to share the rich heritage of Chinese gastronomy with every guest. At Royal 8, he blends tradition with innovation, crafting authentic dishes that promise a dining experience to remember.

 

Alongside him, Shifu Awing elevates the art of dim sum to new heights. Born in Malaysia in 1981 and a graduate of Universiti Malaysia Pahang, he began his culinary journey at 23. Though he started in pastry, a role at a dim sum restaurant in Jakarta sparked a lifelong passion for this intricate craft. Over the years, his commitment to innovation, skill development, and creative inspiration has earned him respect as one of the industry’s most talented dim sum specialists. Today, he presents dim sum at Royal 8 as a fusion of tradition and creativity, offering guests exquisite bites that leave a lasting impression.

 

Reflecting on his journey, Shifu Awing humbly shared, “My motivation to learn and create dim sum lies in my passion for continuous innovation, improving my skills, and discovering new inspirations that I can bring to life through my work as a dim sum specialist.”
