A Celebration of Taste and Tradition: Introducing Keyaki’s New Executive Chef


Located on the 90th floor of Pan Pacific Jakarta, Keyaki Japanese Restaurant is more than just the highest restaurant in Jakarta; it is the setting for elevated dining experiences, where traditional Japanese flavours are reimagined with creativity and flair. In line with this continued pursuit of excellence, Keyaki is proud to introduce its new Japanese Executive Chef: Chef Tadashi Inose. 


Chef Tadashi adds a wealth of experience and creativity to the Pan Pacific Jakarta culinary team. Bringing more than 40 years of mastery in Japanese cuisine to the table, he blends tradition with innovation, crafting menus that are both visually striking and deeply rooted in authentic recipes. His leadership style is hands-on and collaborative, driven by a passion for delivering memorable dining experiences and nurturing the growth of his team. With this approach, Chef Tadashi aims to take the restaurant to new heights, both in terms of culinary excellence and guest satisfaction.

To mark his debut at Keyaki, Chef Tadashi presents a thoughtfully curated selection of four signature dishes that capture the essence of Japanese culinary heritage, while also reflecting his refined touch. All the dishes are imbued with his years of experience in Japanese cuisine; blending traditional aspects through authentic Japanese menu and comfort flavour combinations with modern techniques in cooking and presentation, designed to deliver a culturally rich dining experience for guests.
 


One standout is the Alaskan Black Cod Pirikara, marinated in miso and finished with a sweet and spicy glaze made from kanzuri chili citrus, resulting in a rich umami flavour Another is a delicate and refreshing dessert – the Mizu Mochi with Kuromitsu and Kinako. “Mizu” translates to water in Japanese, and the mochi itself resembles a dewdrop; soft and translucent, it is characterised by melt-in-your-mouth sweetness, freshness in every bite and a nutty hint from the Kinako. Other notable creations include Tuna or Salmon Tataki Sashimi, drizzled with aromatic truffle sauce and Aspara Shiitake Kuwayaki, enhanced with Yuanji Sauce and crispy garlic chips.


In celebration of Chef Tadashi Inose’s arrival, Pan Pacific Jakarta is proud to unveil a new weekday lunch buffet at Keyaki Japanese Restaurant. This special culinary offering is designed to transform the traditional lunch break into an exceptional dining experience that reflects both the artistry of Japanese cuisine and the elegance of the restaurant’s sky-high setting. Guests are invited to take a midday pause from the hustle and bustle of the city and step into a refined atmosphere where authenticity meets innovation.
 


The buffet offers a thoughtfully curated selection of Japanese dishes, skilfully prepared by our expert chefs using only the freshest and finest ingredients. Guests can indulge in a variety of offerings, including freshly made sushi, sizzling robatayaki grills and an array of teppanyakistyle seafood. The culinary experience continues with savoury yaki udon, offering a comforting yet refined taste of Japan. To conclude the meal, diners can enjoy a decadent matcha tiramisu and a range of other delightful delicacies.
