The Langham, Jakarta is delighted to unveil a graceful new chapter in its culinary journey with the relaunch of ALICE, now transformed into ALICE by Tom Aikens, an elegant French bistro set to open on 23 April 2025, in the heart of Jakarta.

 

With a refreshed concept under the creative direction of acclaimed British chef and Michelin-starred culinary visionary Tom Aikens, the menu is developed in collaboration with the hotel’s Executive Chef, Jeremy Jouan, an esteemed French chef with extensive global experience. ALICE by Tom Aikens invites guests to immerse themselves in a lively atmosphere filled with enticing flavours, aromas, and sounds, reminiscent of a classic Parisian bistro. Whether enjoying a meal indoors at a white-clothed table or in the outdoor terrace area, guests will experience warmth, hospitality, and authenticity.

 

 

Beyond the signature dishes, the à la carte menu at ALICE by Tom Aikens offers an expansive selection of refined French favourites, designed to cater to both casual and celebratory dining. Guests may also indulge in Escalope de Saumon à l’Oseille — a refined interpretation of seared salmon accompanied by a velvety sorrel sauce that brings a subtle tang, perfectly balancing the richness of the fish. Meanwhile, Côte de Veau offers a heartier option: a tender milk-fed veal chop, pan-seared to golden perfection and served with seasonal vegetables and a robust veal jus, embodying rustic elegance at its finest. 

 

To complement the mains, a thoughtful selection of garnitures — including creamy Gratin Dauphinois and buttered Haricots Verts “Lyonnaise” — invites guests to personalise their plates. A trio of housemade sauces — béarnaise, mushroom, and pepper — further elevates the experience, allowing each dish to be enjoyed precisely to taste.

 

 

A standout feature at ALICE by Tom Aikens is the Plats du Jour — a daily rotating Chef’s Special that captures the essence of French comfort cuisine. Each day brings a new culinary experience, meticulously prepared by Chef Aikens and his team to highlight fresh ingredients and time-honoured techniques. From the rich and tender Boeuf Bourguignon on Mondays to the aromatic Poulet “Chasseur” on Wednesdays, and the elegantly rustic Coq au Vin on Sundays, every dish offers a unique opportunity to explore the depth of traditional French flavours. These daily creations are more than just specials — they are heartfelt expressions of the bistro spirit, served with authenticity and flair.

 

Tom Aikens, one of Britain’s most celebrated chefs and the youngest to earn two Michelin stars, brings his unwavering commitment to quality and authenticity to this revamped concept. His culinary foundations were forged in some of Europe’s most respected Michelin-starred kitchens, having worked alongside Pierre Koffmann at La Tante Claire, Joël Robuchon, and Gérard Boyer in Reims — all legendary French chefs whose influence profoundly shaped his classical technique and deep appreciation for French gastronomy. This grounding informs Aikens’ refined, flavour-forward approach that now leads the new direction of ALICE.

At the heart of ALICE’s offerings is its continuation of The Langham’s celebrated Afternoon Tea, a ritual dating back to 1865 when it was first introduced at The Langham, London. With his British heritage and reverence for tradition, Tom Aikens presents a renewed take on the beloved custom, pairing freshly baked scones, delicate sandwiches, and intricately crafted patisserie with a flourish of modern refinement.
