To do that, we have to make sure that our team is well looked-after while doing their work because they will make sure that our guests will have the best experience too,” explains Nicolas Mercier, victor of the Food and Beverage Director of The Year award at the World Gourmet Summit in 2017 and InterContinental Jakarta Pondok Indah newly appointed Hotel Manager. With stints that span the globe, from Geneva to Osaka via Istanbul and Singapore, the Paris native is a well-respected authority on the subject.
Nicolas Mercier’s life-long passion for hospitality management began at the prestigious Vatel International Business School in Nîmes, France, where he earned a degree in International Hotel Management. It was a second career pivot for young Nicolas who spent his formative years being trained as a footballing prodigy before stylishly adorning the runways of Paris’s most famous fashion houses.
The early years of his hospitality management career ignited his 10-year affair with Singapore where he had two separate assignments at Hotel Swissôtel The Stamford. It was here that the prodigious hotelier started collecting one award after another. And it was this guarantee of work excellence that earned him a move to a five-star hotel in Sydney Darling Harbour for a year before he jetted off to Vietnam to help complete the opening of InterContinental Phu Quoc Long Beach Resort.
This new assignment in Jakarta, a city he first visited as a seven-year-old, came after a stint in an upscale boutique hotel in a serene vineyard in Provence, France. A keen foodie who cherishes the experience of trying new concepts, Nicolas aims to use his transcontinental knowledge – Europe, Asia, and Australia – to elevate guests’ experiences at InterContinental Jakarta Pondok Indah. “Knowledge through training and education is the key,” he says echoing one of his foremost idols Nelson Mandela.
