T’ang Court Jakarta, the Langham brand’s legendary Cantonese restaurant at The Langham, Jakarta, celebrates its second anniversary. To commemorate this special occasion, T’ang Court will host a special collaboration featuring Executive Chef Tony Su from the Michelin-starred T’ang Court in Shanghai alongside the restaurant’s own Chinese Executive Chef, Chong Kooi Sam. This exclusive dining experience will be available from 24 to 28 October 2024, showcasing unique set menus that celebrate the best of Cantonese cuisine.
Delighting T’ang Court’s 2nd Anniversary Best of the Best Set Menu
For this special celebration, T’ang Court Jakarta brings together Chef Tony Su and Chef Chong Kooi Sam, reuniting them in an extraordinary culinary collaboration. Both chefs, who have worked closely in Shanghai, share an undeniable synergy that will be showcased in a menu combining Chef Tony’s mastery of traditional Cantonese delicacies, deeply rooted in his expertise with classic Chinese ingredients, and Chef Sam’s modern interpretations, shaped by his diverse culinary background.
The course begins with a bold Spicy Peach Blooms, a cocktail crafted from vodka infused with chili lemon, peach syrup, and apple juice. To whet the appetite, a Crispy Prawn Cake is served as an amuse-bouche, offering a delightful contrast of fluffy and crispy textures. Next, the Chilled Marinated Lobster in Teochew Style impresses with its fragrant, savoury, and slightly sour flavours, highlighting the rich, fresh lobster.
The meal continues with a warming Braised Fish Maw soup, featuring shredded chicken, tangerine peel, and chrysanthemum petals. This thick, savoury dish offers a medley of textures, with the zesty tangerine peel and fragrant chrysanthemum adding a unique touch. Next, the Braised 5 Head Abalone with Sacha Sauce is served in a rich, savoury Sacha sauce with a hint of zest, highlighting the delicate softness of the abalone. One of the standout dishes, the Poached Star Grouper with Salted Lemon and Pickled Vegetable, delights with its fresh, springy Bintan grouper in a hearty broth, complemented by salted lemon and pickled vegetables for a zesty finish.
Prepare to indulge in the Crispy Short Ribs with Truffle and Port Wine Sauce, a dish designed to satisfy your appetite. The tender, juicy short ribs are elegantly presented alongside broccolini, showcasing a crispy exterior that adds a delightful texture. The thick, flavourful sauce perfectly complements the meat's tenderness. Following this, the Braised Stuffed Chicken Fillet with Crabmeat Sauce offers a unique experience with its contrasting textures and rich flavours. The tender chicken is topped with crispy fish maw and served in a luscious crab meat sauce, enhanced by the addition of crab roe.
Although typically served towards the end of the meal, the carb dish Fried Glutinous Rice with Seared Scallop and Abalone Sauce is simply irresistible. Topped with two beautifully seared scallops that add an enticing allure, the dish captivates with its presentation. Each bite reveals the delightful crunch of crispy sea urchin hidden within the fried rice, creating a harmonious blend of textures and flavours that makes this dish a standout.
As the meal concludes, T’ang Court presents two delightful desserts to satisfy your sweet cravings. First, the Double-Boiled American Ginseng with Snow Pear offers a warm, comforting finish reminiscent of peach gum, perfectly refreshing the palate. Next, the Crispy Glutinous Rice Ball with Avocado and Bird's Nest Filling bursts with delightful avocado freshness in every bite, providing a vibrant and satisfying end to your dining experience.
