The essence of Nikkei cuisine is captured through the concept of Henshin (変身), a Japanese word meaning "transformation"—a fitting tribute to the evolving flavors born from the Japanese community in Peru. This unique cuisine blends vibrant Peruvian ingredients with delicate Japanese techniques, delivering dishes with bold umami profiles and harmonious textures.

For those eager to explore Nikkei cuisine, Henshin offers thoughtfully curated tasting menus ranging from four to eight courses. The journey begins with Piqueos, a selection of assorted small bites, followed by Tartar de Atun, a yellowfin tuna tartare enhanced with ikura, quail egg, rocoto, and truffle oil. The Signature Nigiri Trio highlights premium fresh seafood, while the standout dish, Carpassion Ceviche, presents salmon and avocado in a passion fruit-infused Leche de Tigre. The main course features a tender Australian Black Angus Beef Tenderloin, with desserts like Carro de Chocolate—a Peruvian chocolate medley—and Suspiro de Maracuya, crafted with passion fruit, camu-camu, banana, and dehydrated meringue, offering a sweet finish. Optional wine and sake pairings are available to enhance the dining experience.

 

Beyond the tasting menus, the à la carte offerings continue to showcase the essence of Nikkei cuisine. Highlights include the Nikkei Wagyu Beef Tartare and the indulgent Henshin Rolls, made with salmon belly, foie gras, and caramelized Amarillo chili. Seafood lovers will enjoy the Vieira Ceviche—a refreshing combination of Hokkaido scallops and octopus—and the Langosta, featuring spiny lobster with smoked rocoto butter. For a bold and comforting dish, the Nikkei Ramen combines wagyu striploin MB09, bone marrow, omega-3 egg, and golden curry broth.
