Hosted by Yvonne Chiong Mougin, the distinguished Export Manager for Opus One Winery for Southeast Asia, Hong Kong, Macau, and Taiwan, she stands as a wine industry luminary. A SHATEC-trained professional with a Master's from Hong Kong/Edinburgh University, Yvonne made history as China's first female sommelier in 2003. With accolades including the Australian competition award and prominent roles at renowned establishments like Michael Angelo and Michelin-starred Jean Georges, her vast expertise promises a wine pairing dinner of unparalleled sophistication.
Guided by the skilled Director of Culinary, Chef Oscar Perez, and Chef de Cuisine, Rizky Apriliana the Opus One Wine Dinner at J.J.A. offers a curated dining experience, emphasizing product-driven dishes that honor the seasonality of ingredients. Complementing this exceptional dining affair are guilt-free desserts curated by Executive Pastry Chef Kevin Lee, a final touch to a delectable culinary journey that showcases the exceptional talents with premium selections from the globally acclaimed Opus One wine collection, recognized as one of the Top Wineries in the World and featured among the World’s Best Vineyards.
Commencing with a welcoming glass of champagne, the curated five-course dinner begins with the delicate taste of Smoked Oscietra "Sturia" Caviar, harmoniously paired with egg mousse, cucumber gel, and chives, all complemented by Taittinger Champagne Brut Reserve. This is followed by succulent Hokkaido Scallops & Duck Foie Gras, accentuated with brown onion & leek cream and rosemary oil, perfectly paired with the 2018 Roserock Chardonnay.
The journey continues with Poulet de Bresse, featuring river yabbies and shiitake mushroom in a cilantro double boiled herbal soup, brought to life with the 2016 Opus One. The main event highlights the rich flavors of Yamagata A5 Sirloin, combined with glazed Japanese grapes, red onion potato Pont Neuf, and a tarragon reduction, paired with both the 2017 and 2018 Opus One. The finale is a Peach Composition dessert, blending peach & lime with peach sponge cake, and a refreshing peach-coconut sorbet with fresh mint, harmonized with Overture by Opus One. To complete the experience, guests are treated to St. Regis Praline, and a choice of freshly brewed coffee or tea.
