A Celebration of Manado & Minahasan Culinary Heritage

 

Bel Étage invites guests to embark on a culinary journey to North Sulawesi with Torang Pe Rasa, a special dining showcase featuring Chef Jovan Koraag, the chef-founder of Jakarta's acclaimed Manado restaurant, Mata Karanjang. Taking place on 18 & 19 July 2026, this special collaboration celebrates the warmth, pride, and rich culinary traditions of Manado and Minahasa through authentic recipes and vibrant regional flavours.

 

Born and raised in Manado, Chef Jovan Koraag has built a distinguished culinary career spanning nearly two decades across Singapore and Indonesia. A graduate of SHATEC Singapore, he refined his craft with leading hospitality groups and international restaurant brands. He later served as Head Chef for Jamie Oliver Restaurants in Indonesia, before establishing himself as a restaurateur and culinary entrepreneur. Today, he leads several dining concepts under Solo Pizza Indonesia Group, with Mata Karanjang serving as a heartfelt tribute to the cuisine, traditions, and flavors of his North Sulawesi roots.

 

For this special occasion, Chef Jovan presents a menu showcasing some of North Sulawesi's most beloved dishes. Highlights include Brenebon Soup, the beloved Manadonese red bean soup enriched with beef short ribs and mixed spices; Ayam Kinetor, free-range chicken infused with aromatic Manado herbs and spices and cooked in bamboo; and Tinorangsak, succulent lamb shoulder slow-cooked in the region's signature spice-rich sauce. The menu is further complemented by Fish Roe Woku, Gohu, Klappertaart, and other regional specialties, rounding out a dining experience that captures the essence of North Sulawesi's rich culinary heritage.
