Pullman Ciawi Vimala Hills invites guests to celebrate Indonesia's 81st Independence Day with Four Hands Dining Experience: Flavors Without Borders, an exclusive culinary collaboration between Executive Chef Rosi Hendriyanto and renowned healthy-focused chef Devan Tanuwidjaja. Taking place from 15–17 August 2026 at Damar Restaurant, the three-day dining experience reimagines Indonesia's beloved regional flavors through contemporary techniques, thoughtful storytelling, and the signature creativity of two chefs whose culinary journeys are rooted in memory, culture and craftsmanship. Designed for food lovers, families, couples, and discerning travelers, the collaboration transforms every dish into a celebration of Indonesia's diverse culinary heritage.

For Chef Devan Tanuwidjaja, the menu is deeply personal. A culinary leader whose career spans Four Seasons, JW Marriott, Hotel Mulia, InterContinental, and former Culinary Director of TWG Tea Indonesia, Chef Devan brings global techniques while remaining closely connected to Indonesian flavors. "Being a sojourner has taught me that home isn't always a place—it can be a flavor," said Chef Devan. "Tortellini became part of my story because Western cuisine shaped my career, while Soto Betawi reminds me of the simple meals I treasured growing up, when every proper meal mattered. I want guests to remember that every sip, every bite, is worth it."
Executive Chef Rosi Hendriyanto shares an equally heartfelt inspiration. "For me, Bubur Kampiun is more than dessert. It takes me back to Bukittinggi during Ramadan, gathering with family to break the fast together. It was always the dish we looked forward to, and through this collaboration, I hope every guest experiences that same warmth, nostalgia and sense of togetherness."
The culinary journey unfolds through two distinctive dining experiences at Damar Restaurant, each celebrating Indonesia's diverse regional heritage with contemporary finesse. The exclusive set menu, available for lunch on 15 and 17 August and dinner on 16 August, begins with Banten Milkfish Satay (Sate Bandeng), followed by Soto Betawi Tortellini, where one of Jakarta's most iconic soups is reimagined through handmade Italian pasta. The experience continues with Crispy Duck Confit with Madura Black Spice, a refined interpretation of the beloved Bebek Madura, before concluding with the nostalgic sweetness of Betawi Kue Rangi.
Complementing the set menu, the Buffet & Live Stations on 16 August Dinner and 17 August Independence Brunch showcase an exploration across the archipelago, featuring Salmon Gohu Millefeuille from Ternate, Grilled Ox Tongue with Brenebon Jus inspired by Manado, Mangut-Baked Barramundi in Ngayogyakarto style, and a live dessert station serving West Sumatran Bubur Kampiun. Together, every dish reflects the chefs' shared philosophy of honoring Indonesia's culinary identity while presenting familiar flavors through a modern, borderless perspective.

Four Hands Dining Experience: Flavors Without Borders will be available from 15–17 August 2026, with set menu lunches on 15 and 17 August, a set menu dinner on 16 August, a buffet dinner on 16 August, and a celebratory brunch buffet on 17 August. Prices start from IDR 628,000++ for the set menu (2 persons) and IDR 588,000++ per adult for the buffet, while children dine for IDR 388,000++ under 11 years old, and kids under 5 years old eat free.
