
A Nusantara Story Welcomes Chef Norman Ismail for an Exclusive Culinary Collaboration
Dining Room of Park Hyatt Jakarta presents a special edition of A Nusantara Story, featuring an exclusive collaboration with acclaimed Indonesian chef Norman Ismail. Available on Friday, 19 June, 26 June, and 3 July 2026, the dining experience invites guests to explore Indonesia's culinary heritage through a collection of dishes inspired by regional traditions and contemporary interpretation.
Celebrating the diversity of the Indonesian archipelago, A Nusantara Story brings together flavors, ingredients, and stories from across the nation. For this exclusive collaboration, Chef Norman Ismail presents a selection of signature creations that reflect his deep appreciation for Indonesia's culinary traditions, thoughtfully expressed through modern techniques and refined presentation.

Among the featured dishes is Beef Tuturuga, sous vide beef tenderloin accompanied by pandan and kemangi infused beef jus, cheddar kremesan, potato pavé, baby carrots, asparagus, pickled onions, and chili oil. Tuna Lawa Baleh showcases tuna crudo with bilimbi, caramelised pineapple, green chili, pomelo, and torch ginger infused green oil.
Guests may also enjoy Bakakak Parahyangan, featuring free range chicken served with kari sauce, crunchy potato cake, peanuts, sambal bawang, and pickled lobak. Completing the selection is Andaliman Octopus, pairing grilled octopus with kalio reduction, deep fried cassava ball, pickled shallots, fried shallots, and gendar.
