Curated in partnership with Beema Honey, purveyors of award-winning raw Indonesian honey, the Liquid Gold Afternoon Tea explores the unexpressed potential of honey – its depth, beauty and flavour – through both sweet and savoury delights. Executive Pastry Chef Lorenzo Sollecito reimagines teatime with a golden touch, showcasing an incredible variety of honeys from across the archipelago: think rambutan blossom, Java trigona, cotton blossom and more. Sourced from Indonesia’s rainforests and organic farms, all Beema honeys featured in the menu are produced through sustainable and natural beekeeping methods.
Dressed in vibrant yellows and floral touches, the Liquid Gold feast sets a sunny tone for celebration. Guests can look forward to standouts like the Yellowfin Tuna Tartare, featuring dark acacia honey and yuzu gelée, and the Sunflower Choux, crafted with rambutan blossom honey, cream cheese mousse and strawberry compote.
Scones, the all-time favourite, also get a honey upgrade, alongside innovative savouries like the Beef au Soleil, where a dash of Java gold honey pairs beautifully with rich tenderloin and French onion. Fine teas by Dammann Frères complete the journey. Guests can enhance their experience with honey-centric beverages. Sip signature cocktails such as the Parfum de Pêche, a delicate blend of cotton blossom honey, Tanqueray gin and peach liqueur, or keep it light with mocktails like the Bee’s Garden, crafted with trigona honey, chamomile, ginger and fizzy water.
