The afternoon tea starts with an amuse bouche that consists of apple, beetroot and ginger, followed by the sweet treats, such as Shokupan Buttered Kaya Toast; Mandarin and Basil Cheesecake; 70% Dark Chocolate, Gula Melaka and Cinnamon; as well as Yuzu, Apple & Mint. For sharing, a petit gâteau is presented, crafted with jasmine, kumquat, vanilla and black sesame. To balance the sweetness, an assortment of savory bites is served, such as Miso Cured Salmon with Ikura and Seaweed Emulsion; Duck Tart with Scallion and Hoisin; Chicken Tikka Croquette with Mint Chutney and Yellow Fin Tuna Crudo with Sambal Matah and Citrus Aioli. The tea time concludes with a selection of chocolate pralines, including Milk Chocolate Ginger, Berries Honeycomb, Black Sesame Oat Milk and Mandarin Caramel.
