COPA and Santanera Bali Celebrate Latin American Flavours in Jakarta

 

This July, COPA at 25hours Hotel Jakarta partners with Santanera Bali for a two-night culinary collaboration that celebrates the richness of Latin American food, flavours, and traditions, brought together by two chefs who have built their careers in Indonesia.

 

Taking place on Friday and Saturday, 17–18 July 2026, the collaboration brings together Santanera Bali’s Andrés Becerra and COPA’s Chef Matias Mardones for a dining experience shaped by fire, smoke, bold flavours, and a spirit of conviviality.

 

Rather than a traditional takeover, the event highlights a meeting of perspectives—two Latin American chefs from different backgrounds and journeys, united by a shared approach to hospitality and cooking.

 

Both Andrés and Matias come from Colombia and Chile, respectively, and have spent years working across different countries and cultures before establishing themselves in Indonesia. While they remain deeply connected to their roots, their cooking reflects how those traditions have evolved through global experiences and local influences, resulting in a menu that feels both authentic and contemporary.

 

Known as one of Canggu’s leading dining destinations, Santanera Bali has built a reputation for its ingredient-driven approach, shaped by Andrés Becerra’s culinary vision and vibrant atmosphere. Andrés Becerra’s culinary journey spans Bogotá, Melbourne, Copenhagen, and Bali, shaping a style that blends Latin American techniques with local produce, balancing fire, acidity, texture, and layered flavours.

 

At COPA, Chef Matias Mardones brings his own globally influenced perspective. Originally from Chile, he has worked across Hong Kong, Manila, Macau, and Korea before arriving in Jakarta, where his cooking continues to focus on bold flavours, open-fire techniques, and a social, shareable dining experience.

 

Fire plays a central role in the collaboration, reflecting a defining element of Latin American cuisine and a shared philosophy between both kitchens. The menu highlights cooking over charcoal and wood fire, alongside fermentation, native ingredients, and vibrant flavours interpreted through Indonesian produce.

 

 

Selected dishes further illustrate this narrative. The Scallop Toston offers a delicate yet surprising bite, combining French scallop with Indonesian sambal hijau atop a traditional toston. The Torta Ahogada reimagines the classic Mexican "drowned sandwich" with a house-baked potato bun, red snapper, pickled cabbage, and a prawn and habanero bisque. Meanwhile, the Wood-Fired Quail with mushrooms and black mole showcases the importance of fire cooking, with deboned quail stuffed and finished in COPA’s wood-fired oven.

 

Together, the chefs present a menu that reflects both heritage and evolution, rooted in Latin American traditions while shaped by their journeys and the ingredients of Indonesia.

“Both COPA and Santanera share a similar way of approaching food,” says Chef Matias Mardones. “It’s flavour-driven, relaxed, and built around bringing people together around the table.”

The collaboration will take place at COPA, the Latin American restaurant at 25hours Hotel Jakarta, known for its charcoal-grilled dishes, colourful interiors, and lively dining atmosphere in the heart of SCBD.
