
COPA and KAUM Bali: From Heritage Recipes to the Grill
This August, COPA at 25hours Hotel Jakarta partners with KAUM Bali for a weekend culinary collaboration celebrating Indonesia's rich culinary heritage through the shared perspectives of two chefs whose journeys have been shaped by curiosity, craftsmanship, and a deep respect for ingredients.
Taking place on Friday and Saturday, 7–8 August, followed by a special National Day Brunch on Sunday, 9 August 2026, the collaboration brings together KAUM Bali's Chef Maxie Millian and COPA's Chef Matias Mardones for a dining experience that explores Indonesian flavours through open-fire cooking, regional traditions, and contemporary techniques.
Rather than presenting Indonesian cuisine as a collection of familiar classics, the collaboration explores how heritage recipes can evolve while remaining true to their origins. It is a meeting between Chef Maxie's deep exploration of Indonesia's culinary diversity and Chef Matias' globally influenced approach to cooking over fire, creating a menu that feels both rooted and unexpected.
Part of the Potato Head family, KAUM has become one of Indonesia's most respected dining destinations by documenting regional recipes, forgotten ingredients, and traditional cooking methods from communities across the archipelago. From bamboo grilling and fermentation to pit roasting and hand-ground spice pastes, every technique serves a purpose, allowing each dish to tell the story of where it comes from.

Leading the collaboration is Chef Maxie Millian, whose bold approach to Indonesian cuisine has been shaped through kitchens in Dubai and some of Bali's most celebrated restaurants, including Teatro Gastroteque, Sangsaka, Merah Putih, Aperitif, and Locavore NXT. Today, at KAUM Bali, he continues to reinterpret Indonesia's culinary traditions through a contemporary lens while remaining deeply connected to their origins.
At COPA, Chef Matias Mardones brings his own perspective to the table. Originally from Chile, he has spent years cooking across Hong Kong, Manila, Macau, Korea, and Jakarta. While Latin American cooking remains his foundation, his appreciation for Indonesian ingredients and open-fire cooking creates a natural dialogue with KAUM's philosophy.

The menu reflects that conversation. Indonesian ingredients meet charcoal grills, wood fire, fermentation, and contemporary techniques, creating dishes that honour tradition while introducing new perspectives. Alongside the collaboration menu, guests can also experience a special cocktail takeover at Oddbird Bar, where KAUM Bali's mixologist presents a selection of cocktails inspired by Indonesian ingredients and regional flavours.
Together, the collaboration celebrates not only Indonesia's culinary diversity but also the people, producers, and traditions behind every dish.
"Food becomes more interesting when different perspectives come together," says Chef Matias Mardones. "KAUM has spent years preserving Indonesia's culinary stories, while at COPA we naturally cook over fire and celebrate sharing. Bringing those ideas together felt like the right conversation to have."
The collaboration takes place at COPA, the Latin American restaurant at 25hours Hotel Jakarta, before continuing upstairs at Oddbird Bar for an evening of cocktails inspired by Indonesia's diverse landscapes and ingredients.
