Grand Hyatt Jakarta welcomes Chef Bae Seung Hyun from Grand Hyatt Seoul to present Korean teppanyaki at Sumire from 10 to 19 November 2023.
The award-winning Chef Bae is raising the bar of fine culinary offerings in Jakarta with an exquisite teppanyaki experience for maximum four guests per session. The set menu at IDR 2,500,000++ per person opens up with squash tarte and Hanwoo tteok-galbi or grilled short rib patties that tease the palate. Premium seafood in sumptuous dishes including scallop with caviar, white bean and sea urchin sauce, as well as mero papillote with prawn, clam, and bouillabaisse, exudes fresh and rich flavours. The teppanyaki highlight is Hanwoo beef with potato pavé and galbi sauce, a Korean meat specialty. To further elevate the offerings, guests may order add-ons of either lobster mandu with caviar, shrimp, scallop, and boochu, or sinseollo that consists of beef, squid pancake, morel and walnut. A sake pairing option by sake sommelier Haruka Eumura is on offer at IDR 725,000++ per person.
Bae Seung Hyun is Chef de Cuisine of Teppan at Grand Hyatt Seoul, South Korea. He previously worked at Grand Hyatt Incheon where he developed Korean specialties for international events, such as the 2010 G20 Gala Dinner, 2014 Incheon Asian Game and 2018 Pyeongchang Winter Olympics. Chef Bae is an active member of the International Culinary Association 'Auguste Escoffier Asia' since 2006 and the national culinary team 'Sura' since 2014. He has also won 'NS Cookfest 2017 in Seoul', the largest cooking competition in South Korea, amongst other prestigious awards.
