PA.SO.LA Restaurant Presents "The Local Harvest" Eco-Curean Dining Experience with Mozaic Ubud

 PA.SO.LA Restaurant and Lounge is delighted to introduce an eco-curean dining experience, aptly named “The Local Harvest”. Executive Chef Willmer Colmenares will be collaborating with Chef Blake Thornley from Mozaic Ubud Bali, to present a six-course, stellar set menu curated by sustainable ingredients around the archipelago. This remarkable event is scheduled to take place on Level 6 at The Ritz-Carlton Jakarta, Pacific Place and will be open to the public on October 20, 2023 beginning at 6PM.

A Local Harvest dining experience represents a remarkable culinary journey that transcends conventional dining norms. In this innovative gastronomic adventure, every element of the meal is meticulously designed to minimize waste and promote sustainability. From sourcing locally and seasonally to responsible ingredient selection, PA.SO.LA focuses on ensuring that no resources go to waste in the entire process.

Chef Willmer Colmenares and Chef Blake Thornley have joined forces to present THE LOCAL HARVEST, a six-course set menu that showcases their creative prowess in transforming food scraps and overlooked ingredients into delightful dishes. Their innovative approaches to gastronomy are dedicated to fully utilizing each ingredient to its maximum potential. Guests can witness their culinary magic as they turn often-overlooked ingredients and food scraps into palate-pleasing surprises.

Priced at IDR 888,000++ per person, this unforgettable evening promises to redefine the way Guests appreciate fine cuisine while championing sustainability. 

In addition, Bar Manager of PA.SO.LA Restaurant, Jailani and Bar Manager of Mozaic Bali, Bili Wirawan, will be on hand to craft exquisite cocktails and zero-proof cocktails pairing collections that harmonize with each course, enhancing the overall dining experience. The cocktails pairing is priced at IDR 358,000++ per person, and the zero-proof cocktails pairing is available at IDR 198,000++ per person.

For over two decades, Mozaic has been a pioneer of fine dining in Bali, helping to establish the island as a leading Asian culinary destination. It holds the distinction of being the only restaurant in Indonesia that is a member of Les Grandes Tables du Monde (Best Restaurant of the World), an association exclusively composed of 2 and 3 Michelin-starred restaurants.

Chef Willmer began his culinary journey in Venezuela, gaining experience at Michelin-starred restaurants and working alongside culinary luminaries such as Andrés Madrigal and Pierre Gagnier. His dedication, passion, and creativity eventually led him to Shanghai, China, in 2013, where he managed culinary teams for eight properties across Greater China and developed creative culinary concepts for prestigious dining establishments. Three of his concepts earned The Michelin Plate & Black Pearl awards. In September 2022, he made Jakarta his home, becoming the Executive Chef of the luxurious The Ritz-Carlton Jakarta, Pacific Place.

Chef Blake's culinary journey began at the age of eleven, starting with volunteering, culinary contests, and working in renowned Chicago restaurants, including Charlie Trotter's. He later became the Head Chef at Mozaic in Bali for eight years. In 2017, he joined OHA Group Shanghai, leading award-winning restaurants in Shanghai. Currently, he's reshaping the Mozaic experience with a focus on Indonesian ingredients, challenging traditional norms, and taking pride in his unique culinary style. 

This culinary collaboration promises to be an extraordinary fusion of talent and innovation that celebrates sustainable dining without compromising on taste or experience.
