A shared cultural heritage between the Philippines and Indonesia through gastrodiplomacy
In celebration of the 75th anniversary of the Philippines-Indonesia diplomatic relations, Seasonal Tastes at The Westin Jakarta presents Pagana: Philippine Food Festival that showcases the diverse flavors of Mindanao cuisine curated by Chef Datu Shariff Pendatun.
Available for dinner from 11 to 17 November 2024, Seasonal Tastes features a selection of traditional Mindanao dishes, which shared similar characteristics to certain Indonesian dishes. The buffet includes appetizers such as Pindilutanan a Sagutong or grilled eggplant with coconut cream and Liyawal Istah or raw fish macédoine with green mango, followed by the main dishes such as Tiyulah Itum or beef in burnt coconut broth, Riyandang a Sapi or slow-simmered beef in coconut milk, Piyaparan a Manok or savory chicken tossed in sautéed coconut and Sinigapuna or turmeric and lemongrass fragrant rice. To conclude the meal, desserts are offered, such as Tapay or fermented cassava and Sindul or banana, dumplings, durian and root crops in coconut milk. This special collaboration is available for reservations at IDR 588,000++ per person on weekdays and IDR 608,000++ per person on weekends.
Chef Datu Shariff Pendatun, a Filipino chef and food essayist, brings his culinary expertise to highlight Southeast Asia’s interconnected cultures through gastronomy. Known for promoting Muslim Mindanao cuisine, Chef Pendatun has been actively involved in initiatives such as ‘Dulang’ in Jakarta, where he introduced signature dishes like Palapa Maguindanaon and Piyaparan a Manok as well as sharing his insights on the cultural heritage of Mindanao cuisine.
The term Pagana, originating from the Maranao people of Mindanao, means ‘feast’ and is reserved for special occasions like enthronements and homecoming of Hajj pilgrims. Aligning with the Department of Tourism’s ‘Colors of Mindanao’ campaign, the concept of ‘pagana’ captures the Philippine initiative of welcoming visitors to Mindanao through food and culture.
Seasonal Tastes is an all-day dining that features 360-degree views of Jakarta and a diverse selection of seven different live cooking stations, drawing influences from Western, Indian and Asian cuisines.
