Shangri-La Jakarta is pleased to welcome the skilled Chef Nobuo Tsuji as a guest chef from Nadaman Japanese Restaurant at Kowloon Shangri-La, Hong Kong. He will be showcasing his special dishes at our Japanese Restaurant, Nishimura, from 25 to 27 August 2023.
Having joined Kowloon Shangri-La, Hong Kong in May 2017 as the head chef of Nadaman, Chef Nobuo Tsuji brings with him experience in an impressive 20-year career in the culinary industry, having worked across various branches of the renowned Nadaman brand. Throughout his journey, Chef Tsuji's Japanese heritage has played an integral role in shaping his skills and deepening his understanding of culinary traditions. He began his career as a trainee at Nadaman’s Imperial Hotel in Tokyo, where his exceptional abilities were nurtured and where he flourished as a chef. Notably, Chef Tsuji has also contributed his expertise to Nadaman's bento and deli stores located at Pudong Shangri-La, East Shanghai.
Chef Tsuji's invaluable experience has earned him the trust of his superiors and allowed him to acquire diverse skills and knowledge in managing service flows, understanding guest preferences, and possessing a comprehensive understanding of the culinary culture associated with this classic brand. His skills were recognized and in 2009 he was promoted to a more senior position before joining Kowloon Shangri-La, Hong Kong, after returning to the Nadaman Imperial Hotel.
Chef Tsuji brings a modern twist to the authentic and traditional Japanese cuisine that Nadaman has been renowned for over the past 180 years. He combines locally sourced, seasonal produce with a unique international flair, resulting in exquisite dishes that are presented elegantly and contemporarily.
In his cooking process, Chef Tsuji emphasizes the original taste and freshness of the ingredients. Additionally, he adds several exciting and delightful surprises to enhance the guest experience, introducing new elements to the flavours and presentation.
Collaborating with our head chef of Nishimura Japanese restaurant, Chef Okabe, Chef Tsuji's philosophy aligns perfectly. Together, they create a variety of perfect dishes, combining their passion and love for an authentic Japanese taste with surprising mixtures crafted by their expert hands, resulting in an array of tantalizing appetizers.
Chef Tsuji presents three variations of his signature Kaiseki menu, a true delight for the taste buds. Kaiseki-ryori, a traditional Japanese dinner with multiple courses, takes centre stage. Emphasizing seasonal ingredients and meticulous presentation, each dish is a harmonious balance of flavour, texture and colour. Every aspect is thoughtfully considered. Kaiseki is not only a feast for the palate but also a visual spectacle, a timeless culinary experience. Rooted in history, this revered tradition was once exclusively enjoyed by royalty but has evolved to be savoured by all, symbolizing the utmost respect. At Shangri-La Jakarta, guests will have the privilege of savouring a special array of authentically fresh and vibrant Kaiseki creations.
The Kaiseki set will feature a delightful array of cuisines, including starters, soups, sashimi, assorted appetizers, grilled delicacies, signature dishes, full rice sets and mouth-watering desserts. With three (3) variants to choose from, guests can select a dining experience to suit their palate and preferences, with prices starting at IDR 1,500,000++ per person.
