
To mark Indonesia’s Independence Day, COPA launches Republic of Rasa, a week-long dining event blending local favorites with Latin American flair. From 11 to 17 August 2025, guests can explore a special menu designed to surprise and delight. This is where Latin American influence meets Indonesian soul in bold, unexpected ways.
The limited-time menu combines familiar comfort with new energy: Tuna Sambal Matah Ceviche, Beef Marangi Tacos, Chicken Pelalah Tacos, and Ikan Goreng with Bumbu Kuning. Diners will also find Ayam Geprek with Green Mole, crispy Beef Rendang Croquets. Each dish is designed to balance spice, texture, and a touch of surprise, ending with cool Es Cendol Paletas complete the journey.
“We wanted to create dishes that feel familiar but spark curiosity,” says Chef Matias Mardones. “Republic of Rasa is about celebrating freedom of taste mixing cultures, spices, and memories in one plate.”
The idea came from Independence Day, a moment to honour tradition, but also move forward. Republic of Rasa is about where we’re from, and where we’re going—on the plate and open to what’s next.
The celebration culminates on Sunday, 17 August, when Republic of Rasa takes over the Odd Sunday Brunch with expanded selections and exclusive one-day-only creations from 12:00 to 15:00.
