ROSSO Brings Back Authentic Southern Italian Cuisine with Chef Giuseppe Di Silvestro

Rosso, the Italian restaurant at Shangri-La Jakarta invites guests to rediscover truly authentic Italian cuisine. The newly appointed Chef Giuseppe Di Silvestro will serve loyal patrons an authentic South Italian experience from the Adriatic Sea. He will bring a variety of contemporary and heritage dishes of colorful, refreshing, and vibrant textures from Abruzzo and its surroundings to the table. 

With a lot of experience and notable accolades for his ingenious cooking skills, an Italian native of Pescara started his culinary career in a variety of restaurants in his hometown. He has since traversed the world to showcase his gastronomic creativity by directing teams in London, Abu Dhabi, Melbourne, Shenzhen, and Aix-en-Provence before settling in Jakarta.

Starting this November, 13th, Rosso is open every day for a la carte Dinner from 6 to 10:30 p.m. and Rosso’s brunch Antipasti buffet is available every Sunday from 11:30 am to 3 pm for IDR 450,000++ per person. Guests can also add an extra package with alcoholic beverages starting from IDR 300,000++ per person.

Guests will be pampered with a wide selection of a la carte menus ranging from appetizers, soups, pasta dishes, main courses, pizzas, and side dishes, which will be available daily at dinner. The favorite a la carte menu creations consist of Octopus Pressed “Mortadella” with Steamed Purple Potatoes, Parsley Oil and Taggiasca Olive Powder, and Pumpkin and Smoked Mozzarella Arancini with Parmesan Fondue for the starter menu. Tagliatelle with "Abruzzo Style" is one of the Chef’s signature pasta dishes, and he will surely bring his identity from Pescara to the plate, offering guests a delightful culinary journey.

Another pasta that will also indulge the palate is Handmade Squid Ink Ravioli with Salmon and Dill Filling and Bisque Reduction, a different type of pasta that is certainly worthwhile trying. At the same time, pizza lovers will be happy with a delectable La Bolognese Pizza that consists of the rich taste of Mozzarella, Bologna Mortadella, Pistachio Crumble, and Stracciatella.

The mains serve meaty sensations for you meat lovers. Talking about the mains, from pescatarians to carnivores will be pleased. Be ready to be fulfilled with Beef Fillet with Kale "Ripassato", Truffle, and Polenta Cake, Beef Tagliata with Rocket, Blistered Cherry Tomatoes, Pomegranate, Glaze, and Pecorino Shavings, and 6-Hours Slow-Cooked Lamb Shank with Wine Jus and Rosemary Schiacciata. Their Traditional Pork "Porchetta" with Fennel, Orange Salad, and Apple Compote is another exceptional dish. For the love of seafood, we recommend the Poached Black Cod with Carrot Cream and Honey Roasted Roots Vegetables.

If you have a sweet tooth, you are lucky because Rosso is no stranger to delightful and delicious desserts. It’s hard to decide when you are offered the exceptional intriguing desserts on the menu. Don’t miss their delightful desserts such as Sbrisolona with Mascarpone Cream and Sour Cherries, Frangipane Tartelette with Pears, Sicilian “Cassata” Semifreddo, Dark Chocolate Chilled Tart with Zibibbo, Classic Chocolate Fondant with Tahiti Vanilla Ice Cream, Classic Red Berries Tiramisu, Soffione Abruzzese with Galliano Crème Anglaise, and Birramisu.

For those who adore Rosso's Sunday brunch, the decadent brunch is back to indulge guests' taste buds. Chef Giuseppe will provide an Antipasti Buffet with a variety of cheeses, including Brie, Goat, Gorgonzola, Mozzarella, and Parmesan. Other creations that are distinctively Italian include loaves of bread, Smoked Salmon, Pan-seared Duck Breast and many more for guests’ enjoyment. During the Sunday Brunch, guests can order an a la carte main course from Chef Giuseppe's specially chosen dishes of the day that are part of the buffet package.
