The Hermitage, a Tribute Portfolio Hotel, Jakarta, is excited to announce an exceptional dining experience, "Four Hands" showcasing the collaborative culinary brilliance of Jakarta’s Best Eats’ “Chef of The Year 2019”, Fernando Sindu and The Hermitage Jakarta's Executive Chef, Ferdian Tobing. Hosted at 1928 Restaurant on the 26th - 28th of January 2024, this exclusive event invites guests to indulge in the Makan Tengah Special Menu and Sunday Brunch, by these two culinary virtuosos. 

The collaboration will take epicures on a delectable journey that brings together the distinct flavors and textures of Indonesian cuisine, a hallmark of what 1928 Restaurant is known for. Chef Tobing, with his specialty of infusing a modern touch and sophisticated flair to Indonesian dishes, will join forces with Chef Sindu, known for his style featuring strong flavors — ranging from acidity, a bit of bitterness, salty, spicy, and umami, creating an exclusive culinary collaboration that promises to captivate diners with the rich tapestry of the nation’s diverse culinary heritage.

 

“Four Hands” Makan Tengah Dinner

During this exclusive two-day event, Chef Sindu and Chef Tobing will showcase a modern twist on Indonesian cuisine at the 1928 Restaurant. The starter includes Kripik Pisang Gohu, Coconut Sourdough Bread, Kembang Goyang Abon, and Karoda Kungku, representing the traditional cuisine of Sigi, Central Sulawesi. The main sharing menu features the 38 HRS Wagyu Short Ribs Konro, inspired by a local dish from Makassar, South Sulawesi. Following that is the 5 Days Dry Aged Biromaru Chicken, originating from Sigi, Central Sulawesi, and Tuna Sambal Manado, a grilled tuna loin seasoned with sambal rica rica and a light lontar syrup glaze. Sharing sides include Nasi "Lemang" Bambu and Coconut Uta Kelo, a specialty from the Kaili Tribe, showcasing a mix of
Moringa leaves cooked with coconut milk and shredded smoked Cakalang. To satisfy food lovers, there's the mouth-watering Cendol Duren.

The “Four Hands” Makan Tengah Special Menu at 1928 Restaurant is available at IDR 1,288,000++ per set, ideal for 2 guests, on the 26th and 27th of January 2024 from 7 PM onwards.

“Four Hands” Sunday Brunch

Chef Sindu will create special dishes for the Sunday Brunch menu. Guests will savor authentic Andaliman Pepper Crusted Beef Ribs, complemented by coconut rice pilaf, kluwek, beef bone sauce, and Sambal Ijo. Additionally, the menu features Chicken Biromaru, a specially crafted dish made from Palu’s spiced chicken, served with warm bread, garlic yogurt cream, and dabu-dabu parsley salad.

As patrons enjoy the Sunday Brunch experience, they can indulge in a variety of options, including delectable appetizers, a fresh salad station, and mouth-watering desserts curated by the hotel's own Chef Ferdian Tobing.

The “Four Hands” Sunday Brunch at 1928 Restaurant is available at IDR 688,000 per person, on the 28th of January 2024 from 12 PM onwards.

Chef Tobing, with over 24 years of culinary expertise, showcases his skills, including collaborations with prestigious five-star hotels and prominent F&B groups in Southeast Asia. Notably, he played a pivotal role in rebranding initiatives for various restaurants and contributed to the pre-opening phase of a high-end hotel in Jakarta. Throughout his career, Chef Tobing has cultivated a deep passion for infusing a modern twist into traditional dishes by leveraging local ingredients and employing contemporary cooking techniques.

Chef Sindu embarked on his culinary journey after graduating from the Culinary Institute of America (CIA) in New York. He worked at Michelinstarred establishments, such as Oceana and Boqueria in New York. In 2012, he moved to Jakarta, managing Good For Eats (G48) and overseeing three restaurants. Inspired by his wife, he passionately delved into the exploration of Indonesian cuisine. Chef Sindu showcased his culinary skills at the Ubud Food Festival in 2022, expanding his recognition and appreciation for local cuisine.
