Savoring Innovation: Exploring The 18th Restaurant and Lounge's New Menu

On the 18th floor of the Trans Luxury Hotel, The 18th Restaurant and Lounge presents an exceptional dining experience within its stunning 100-meter terrace lounge. Following the success of the exclusive curated wine dinner "La Dolce Vita" by Chef Francesco Bettoli last July, the establishment now introduces a new menu crafted by the masterful hands of Chef Francesco Bettoli and the culinary team of The 18th Restaurant and Lounge. With a culinary offering that combines superb international cuisine, impeccable service, and panoramic city views, this is an experience not to be missed.

The new creations are certainly not to be overlooked. From appetizers to desserts, each dish is truly tantalizing. We began with Beef Carpaccio as our starter - the sliced beef's velvety texture practically melts in one's mouth. Paired with rocket that adds a peppery zest, it undoubtedly marks a perfect commencement to the dining experience. Another delightful option that we’ve tried is the Japanese Butternut Cream Soup, elegantly served with crispy rosemary croutons. The soup's creamy sweetness, derived from the butternut squash, offers a velvety and indulgent mouthfeel. This luxurious experience is flawlessly complemented by the crouton's crunch, introducing an added layer of complexity to every spoonful.

For the main course, we treated ourselves to another masterpiece from the new menu: the Homemade Ravioli. Showcasing a tender yet slightly chewy texture, the ravioli harmoniously merges with the slow-cooked beef filling. Additionally, the Pan-Seared Snowfish quickly claimed the title of our favorite dish. The snowfish, tender and expertly pan-seared, boasted a flawless texture that practically dissolved on the palate. Enhanced by the delightful creaminess of mashed peas and the vibrant burst of cherry tomatoes, every bite offered a harmonious balance of freshness and richness.

Furthermore, the ever-popular special cut menu remains available and is highly recommended. We had the pleasure of savoring the Australian Wagyu Hanging Tender, accompanied by mashed peas, garlic chips, and peppercorn sauce. The tenderness is undoubtedly remarkable, and the peppercorn sauce is the perfect match.

Moreover to that, the Smoked USDA Beef Brisket is also a must-try! featured exquisitely tender and succulent meat, skillfully smoked to perfection. Served with olive focaccia, the slightly crispy exterior and soft interior of the bread are a perfect match for the smoked beef. On the side, you'll find barbecue sauce that tastes absolutely perfect as a companion to the Smoked USDA Beef Brisket.

A dining experience surely wouldn't be complete without a dessert to satisfy the sweet palate after a satisfying full meal. As for dessert, the Homemade Crispy Apple Tart is an absolute must-try! Crowned with caramelized walnuts and a generous scoop of velvety vanilla ice cream, the Homemade Crispy Apple Tart delivered a dessert experience that exceeded all expectations. This dessert is a symphony of flavors and sensations, serving as an unforgettable finale to a remarkable meal.
