Continuing its commitment to delivering memorable dining experiences, Padma Resort Legian is pleased to welcome Executive Pastry Chef - Salman Pathan to lead the resort's pastry programme. With more than 16 years of experience in luxury hospitality and Michelin-starred dining, Chef Salman brings international expertise while embracing the rich flavours and ingredients of Bali.

 

 

Originally from South Goa, India, Chef Salman's pastry journey began in 2010 and has taken him to some of the world's leading luxury hotels. Throughout his career, he has worked with renowned brands including St. Regis, Anantara, Six Senses, and Four Seasons across Qatar, Oman, Kuwait, and Japan. Most recently, he served as Pastry Chef at Sézanne, the Three Michelin Star restaurant at Four Seasons Hotel Tokyo.


For Chef Salman, pastry is the perfect balance of precision and creativity. His approach combines classic French pastry techniques with seasonal ingredients to create desserts that are elegant, balanced, and full of flavour.


Although he has only recently joined the resort, Chef Salman has already introduced his masterpiece to Padma Resort Legian's newly launched Bali Heritage Afternoon Tea. He refined the sweet selections using French pastry techniques while highlighting local ingredients and flavours, creating desserts that complement the afternoon tea experience.

Inspired by Bali's abundance of local produce, Chef Salman plans to incorporate ingredients such as single-origin chocolate, Kintamani coffee, tropical fruits, and fresh herbs into his future creations. His goal is to combine international techniques with local flavours, offering guests desserts that are both familiar and uniquely Balinese.


Guests can also look forward to Chef Salman's signature French Éclair, which received the Gold Medal at HORECA Kuwait 2023. The award-winning pastry will be reimagined exclusively for Padma Resort Legian with a Balinese twist, reflecting his passion for combining tradition with innovation.

 

Beyond the kitchen, Chef Salman enjoys travelling, driving, and exploring the outdoors. Now calling Bali home, he looks forward to swimming, playing volleyball, and discovering every beautiful corner of the island. As he embarks on this new journey with Padma Resort Legian, guests are invited to experience his thoughtfully crafted sweet creations, inspired by his global expertise and Bali's rich culinary heritage.
