Akasa Restaurant & Bar at Jumeirah Bali introduces a new collection of signature dishes by Head Chef Mauricio Higa, presenting a fresh expression of the restaurant’s flame-grilled menu and Asian influences.
Born and raised in Argentina within a Japanese family, Chef Mauricio brings together precise technique, respect for ingredients and the open-fire traditions shaped by his upbringing. The new dishes reflect this personal culinary perspective through considered flavours, balanced compositions and techniques that draw from Japanese, South American, and wider Asian influences.

The new signatures invite guests to experience Chef Mauricio's culinary story through a considered interplay of flavour, texture and fire, with carefully selected ingredients bringing each dish into focus. Reflecting Akasa's focus on flame-grilled meats and Chef Mauricio's Argentine heritage, Wagyu Picaña takes centre stage, drawing inspiration from the traditions of asado and served with Asian herb chimichurri, garlic chips and lime. Huancaína Octopus follows with tender, slow-cooked octopus finished over the grill, paired with eggplant escabeche, Peruvian ají amarillo and fresca sauce.
The menu then moves into lighter expressions. Maguro Tartar pairs Indian Ocean yellowfin tuna with shoyuzuke egg yolk, Avruga caviar and a crisp katsuobushi cracker, balancing freshness and savoury depth with gentle richness. Seabream Tataki highlights locally sourced wild seabream prepared using kombujime and tataki techniques, complemented by Balinese tangerine, shallot, jalapeño and coriander oil for a bright, aromatic finish.

Richer flavours continue with Atlantic Black Cod, marinated in Den miso and served with pickled fennel, chukka wakame and yuzu-miso sauce, alongside Chicken “A La Brasa” with Peruvian adobo, pineapple chutney and crisp yuca sticks. Australian Lamb Chops and Asian Wagyu Beef Cheek complete the collection, reflecting Chef Mauricio’s journey between Japan, Argentina and Bali through flame-grilled preparations, Asian influences and considered flavour combinations.
Chef Mauricio began his culinary career in Argentina before continuing his journey with Jumeirah in Dubai and later in the Maldives. His arrival in Bali brings another layer of inspiration through the island's ingredients, culinary traditions and close connection to nature, while continuing the multicultural approach that has shaped his cooking throughout his career.
Set above the Indian Ocean on the cliffs of Uluwatu, Akasa Restaurant & Bar offers an evening experience that begins with lunch, sunset drinks and continues into dinner, accompanied by expansive coastal views.
