Within the restaurant, the exclusive Kitchen Studio becomes the stage for Jelajah Rasa. This open, chef-led environment places guests at the heart of the action, where fire, fragrance, and finesse come together in a captivating culinary performance.
Inspired by the philosophy of omakase, where guests entrust the journey entirely to the chef, Jelajah Rasa invites diners to surrender choice and embrace curiosity. Across nine thoughtfully curated courses, Executive Chef Wisnu Adiyatma reinterprets Indonesia’s rich culinary traditions through a refined and contemporary lens. Seasonal produce, premium local ingredients, and modern techniques converge to create a progressive exploration of flavor, positioning this experience as a standout within the evolving landscape of dining in Bali.
True to the Renaissance spirit of discovery, each evening revolves around a mystery hero ingredient personally selected by the chef. The experience begins with a theatrical reveal. A signature Black Box is presented before the first course arrives. Inside, guests encounter key Indonesian ingredients in their purest form, including roots, leaves, spices, and locally sourced elements that anchor the evening’s narrative. As the journey unfolds, these ingredients are transformed across the nine courses, allowing diners to witness their evolution from raw origin to elevated expression.
