From food waste measurement to Zero Waste Menu, the resort encompasses a multifaceted approach
At Grand Hyatt Bali, our extensive strategy for minimizing food waste's environmental impact encompasses a multifaceted approach. Commencing in May 2023, we embraced The PLEDGE on Food Waste certification by Lightblue Consulting. Our commitment includes meticulous food waste measurement, portion size reduction, buffet refill practices, and employing smaller plates. These programs has been fully implemented at Garden Cafe with the aim of reducing the amount of food waste sent to landfills.
Furthermore, we've introduced an array of sustainable initiatives to divert food waste from landfills. These include creating eco-enzymes from fresh organic waste, transforming cooked food waste into valuable fertilizer using Black Soldier Fly Maggots, and collaborating with Scholars of Sustenance to donate surplus food to those in need in Bali.
Our ongoing endeavors, meticulously monitored through the Food Intel Tech app, underscore our unwavering dedication to sustainability and active community involvement. By openly sharing our progress and insights, we aim to inspire others to join us in forging a more sustainable and waste-conscious future. Notable achievements include an average monthly donation of 200kg of excess food, a weekly conversion of a minimum of 576kg of food waste into maggot feed, and approximately 101kg of weekly food waste converted into eco-enzyme. Additionally, our efforts have saved approximately 1 gram of food per portion, equating to around 500 grams of daily food donations.
In addition to our efforts in reducing food waste, Grand Hyatt Bali goes even further with the official introduction of its latest culinary offerings, the "Zero Waste Menu." This momentous development underscores the resort's unwavering commitment to reducing food waste, aligning with its mission to foster environmentally conscious practices.
The Zero Waste Dishes represent an innovative gastronomic approach, meticulously crafted to utilize every part of the plant, minimizing waste and promoting sustainability. This extraordinary culinary initiative encompasses exquisite dishes such as Aloo Gobi, Vegetable Panini, Crispy Baby Potatoes, and Strawberry Tart, all meticulously prepared to meet the highest standards of health and food safety in accordance with ISO 22000 guidelines. These delectable creations are now available exclusively at the resort's esteemed Garden Café, making it a true gem among Bali restaurants. Guests can indulge in a symphony of flavors while supporting eco-friendly dining practices.
