In celebration of Indonesia’s Independence Day, Amarterra Villas Resort Bali, Autograph Collection brought together two culinary talents for an evening of collaboration, culture, and Indonesian gastronomy through Flavours of Nusantara, an exclusive Four Hands Dinner held on Monday, 17 August 2026, at the elegant Chandra Suriya Gate.
The one-night culinary collaboration featured Executive Chef Ari Pramana of Amarterra Villas Resort Bali, Autograph Collection and Executive Sous Chef Yusuf Milyardi of The Laguna, a Luxury Collection Resort & Spa, Nusa Dua, who joined forces to present their individual interpretations of Indonesia’s rich and diverse culinary heritage.
The thoughtfully curated four-course dinner showcased a contemporary take on beloved Indonesian flavors. Rather than simply recreating traditional recipes, both chefs reimagined regional specialties through contemporary techniques, refined presentation, and their own distinctive culinary philosophies.
Guests were taken on a culinary journey featuring an array of Indonesian-inspired creations, including Ikan Tuna Asap Daun Sirih, Octopus Bakar Kecombrang, Gindara Mangut, and Tape Klapertart, alongside other regional specialties. Drawing inspiration from flavors across the Indonesian archipelago, each dish reflected the diversity of Indonesian cuisine while celebrating the chefs’ creativity and modern approach to traditional gastronomy.
Adding a personal touch to the evening, Chef Ari Pramana and Chef Yusuf Milyardi personally introduced each course, sharing the inspiration, ingredients, and stories behind their creations. This interactive element allowed guests to gain a deeper appreciation of the culinary heritage and creative processes behind each dish.
Complementing the dining experience was the timeless sound of live Keroncong music, creating a warm and nostalgic atmosphere that beautifully captured the spirit of Indonesia’s Independence Day celebration.
More than a four-course dinner, Flavours of Nusantara represented a celebration of collaboration, craftsmanship, and culture. Through the meeting of two culinary perspectives, the evening highlighted how Indonesia’s rich gastronomic traditions can continue to evolve while remaining deeply rooted in the flavors and heritage of the archipelago.
