A Glimpse Of Seaside Jazz Mantra at Roso Restaurant, The Meru Sanur

What unfolded was an intimate, jazz-filled dining experience that blended world-class talent with culinary artistry.

On July 30th 2025, What’s New Bali had the delightful opportunity to attend a soulful night of music and gastronomy at The Meru Sanur, part of the prestigious Ubud Village Jazz Festival series. Originally planned as a beachfront affair at Bali Beach Garden, the evening made a smooth and stylish pivot indoors to the resort’s Roso Restaurant due to monsoon weather. 

What unfolded was an intimate, jazz-filled dining experience that blended world-class talent with culinary artistry. 

The plan was to spend the evening swaying to live jazz under swaying palms at Bali Beach Garden. But then the monsoon decided to headline. No problem. The party glided indoors to Roso Restaurant at The Meru Sanur, and suddenly we were wrapped in air-conditioned elegance with candlelight, polished cutlery, and the scent of something deliciously promising from the kitchen.

Things opened with warm welcomes from Ed Brea, GM of Bali Beach Hotel and The Meru Sanur, along with Astrid Sulaiman, the visionary behind Ubud Village Jazz Festival. Then came the Bojan Cvetkovic Quartet, a renowned jazz ensemble from Serbia known across Europe for their dynamic presence and masterful improvisation. Their performance brought the room to life, gliding through original compositions and timeless jazz classics with effortless sophistication.

Dinner, by the way, was a full-on performance of its own. Chef Melvin Chou of Tokyo’s Michelin-starred Terra Tokyo Italian brought his A-game, teaming up with The Meru’s Executive Chef Marco Medaglia. The six courses danced from playful to bold to straight-up decadent. Think amuse-bouche that teased, an intermezzo that refreshed, and a main that made us question reality a little.

 

The setting may have shifted, but the spirit of the evening remained effortlessly intact. Between the rich layers of live jazz, the masterfully crafted dishes, and the warm, welcoming ambiance of Roso Restaurant, the night unfolded with elegance and character.
