Uma Cucina x CIBO! Pasta: A Gracefully Authentic Italian Dining Experience in Ubud

On March 8th 2025, What's New Bali had the immense pleasure of attending a sensational dining experience at Uma Cucina, the Italian-inspired restaurant at COMO Uma Ubud, in collaboration with the renowned CIBO! Pasta.

Set in a warm and inviting space with open-air terraces and communal tables, Uma Cucina was the perfect venue for a night dedicated to authentic Italian cuisine. The spotlight of the evening was Chef Diego Martinelli, founder of CIBO! Pasta and a seasoned chef whose 20+ years of culinary expertise spans world-class kitchens including the Bvlgari Hotels, Four Seasons, and Ferrari Automobili. Born and raised in Italy’s Emilia Romagna region, Chef Diego brought his passion, precision, and love for his homeland’s flavours to every dish.

Vibe of Uma Cucina

The experience began with a delicate Parma ham croquette amuse bouche and unfolded into a beautiful progression of starters and pastas. We were enchanted by the Tuna Crudo paired with stracciatella and pistachio crumbs, and couldn’t get enough of the Burrata with caprese dressing and addictively crunchy focaccia crumbs. Then came the pasta—each one handmade, cooked to perfection, and full of soul. Highlights included the rich and comforting Tortellini al Ragu, the flavourful Beef Cheek Ravioli, and the aromatic Linguine Seafood in a luxurious bisque. These were more than just dishes—they were expressions of Chef Diego’s journey, combining Italian tradition with his international experiences.

Mains like the melt-in-your-mouth Beef Cheek Brasato and scrumptious Pork Belly were served with elevated rustic sides like rosemary potatoes, honey-glazed carrots, and roasted broccolini. The grand finale featured a parade of decadent desserts: from the bittersweet Tiramisu and luscious Mascarpone with Nutella Heart, to a dramatic Hot Chocolate Lava Cake that melted under warm salted caramel. Each sweet course was thoughtfully balanced, never too rich, and full of character. What truly made the evening memorable was Chef Diego himself, who personally presented each course, sharing stories and culinary insights with heartfelt passion. It was an exquisite evening of good food, genuine hospitality, and Italian charm—a night to remember in Ubud.
