Two of Bali's Japanese dining destinations, Tsune Japanese Restaurant, Sanur and Hamabe Japanese Restaurant at The Westin Resort Nusa Dua, Bali, are joining forces for an exclusive four-hands collaboration that brings together contemporary craftsmanship and traditional Japanese culinary heritage. Designed as a celebration of technique, premium ingredients, and culinary storytelling, the experience offers a rare opportunity to explore two distinct interpretations of Japanese cuisine through a thoughtfully curated multi-course menu. The four-hands dining journey will present refined à la carte sushi creations, robatayaki and teppanyaki specialties, and contemporary Japanese flavors that reflect the unique culinary identities of both restaurants.

Representing Tsune Japanese Restaurant, Sanur is Chef Tia, whose contemporary approach to Japanese dining is shaped by precision, artistry, and the dynamic energy of teppanyaki. Under her leadership, Tsune Japanese Restaurant, Sanur has earned international recognition, including accolades at the World Luxury Restaurant Awards 2025. Her cooking philosophy centers on balance, creativity, and elevating each ingredient through thoughtful execution and presentation.
Joining her is Chef Felix Ieryandi of Hamabe Japanese Restaurant, a seasoned chef whose culinary journey includes a tenure at the renowned Nobu at Atlantis The Palm, Dubai. Widely respected for his expertise in robatayaki and traditional Japanese techniques, Chef Felix brings a deep appreciation for authenticity, allowing ingredients and craftsmanship to take center stage in every dish he creates.

The collaboration will be presented across two exclusive dining events. The first takes place at Tsune Japanese Restaurant, Sanur on 26 and 27 June 2026, followed by a second chapter at Hamabe Japanese Restaurant at The Westin Resort Nusa Dua, Bali, on 10 and 11 July 2026. While each venue offers a distinct setting and atmosphere, both experiences are designed to showcase the individual strengths of the chefs while highlighting the harmony that emerges when their culinary perspectives meet.
The menu reflects the signature styles of both restaurants while creating a seamless exchange of flavors and techniques. Tsune will present Hamachi Carpaccio, Japanese Scallops, Spicy Tempura Maki, Salmon Skewer, Salmon Fried Rice, Grilled Prawn, and Flathead Lobster, while Hamabe Japanese Restaurant at The Westin Resort Nusa Dua, Bali contributes Sumatra Snapper Tiradito, Black COD Miso, Wood Fire Eggplant, Pork Chop Houbaya-yaki, and Hamabe Signature rolls. The experience is further elevated by premium nigiri and sashimi selections featuring Lean Tuna, Hokkaido Scallops, Alaskan Snow Crab, Osaka Smoked Eel, and Tazmania Salmon, offering a refined exploration of flavor, texture, and craftsmanship.
