On the evening of Friday, May 23rd, Roso Restaurant officially launched Rasa Nusa, a curated dining experience celebrating the rich culinary heritage of Indonesia. The launch night was marked by an exclusive Wayang Kulit (shadow puppet) performance, artfully synchronized with the flow of dishes, offering guests an immersive blend of cultural storytelling and a culinary journey across the Indonesian archipelago.

 

Indonesia, the world’s largest archipelago with over 17,000 islands, is home to a rich and diverse culinary heritage. Each region brings its own flavors and techniques, blending fresh herbs, earthy spices, and just the right amount of heat. At the iconic Bali Beach Hotel, The Heritage Collection, Roso Restaurant showcases this diversity through Rasa Nusa, a dining experience featuring 22 carefully curated dishes from across the archipelago, from Sumatra to Papua, all crafted with passion and the finest local ingredients.

 

 

The evening began with Serombotan from Klungkung, Bali, a vibrant, plant-based salad dressed in rich peanut sauce, before moving into more robust offerings such as Sate Kambing, charcoal-grilled lamb skewers glazed in Madura’s signature peanut sauce; Gulai Kambing, a slow-braised Minangkabau-style lamb shoulder curry; and Woku Ikan Nila, tilapia cooked in Manado’s fragrant spice blend of lemongrass, turmeric, and basil. To wrap up the dining experience, a touch of sweetness, a traditional dessert of banana, palm sugar crèmeux, and coconut in Pisang Rai, served on one plate.

 

 

The Wayang Kulit performance, created special for the launch, brought a narrative dimension to the event, aligning the sequence of dishes with a fictional journey through the Indonesian isles. Making the debut of Rasa Nusa an evening to remember.

 

Going forward, Rasa Nusa will be available every Friday, offering an unlimited refined Indonesian cuisine in an elegant setting.
