Originally developed as a method to preserve meats before refrigeration, it soon evolved into a refined culinary art, gracing the tables of aristocrats and festive banquets.
Today, French Kiss Bali pays homage to this heritage dish with a contemporary flourish. Baked live in the open chef’s kitchen, their version features delicately spiced, slow-cooked meat encased in buttery, golden pastry—resulting in a dish that’s both rustic and refined. Finished with artistic precision and served warm, it’s a culinary time capsule that brings history alive on your plate.
“To us, the Pâté en Croûte is more than food—it’s storytelling through flavor,” says the Head Chef of French Kiss Bali. “We’ve noticed how intrigued our guests become once they hear its history and see the craft that goes into it.
