On Friday, 13th June 2025, What's New Bali had the pleasure of joining COMO Uma Canggu’s latest celebration of regional heritage: COMO Culinary Odyssey – Buleleng Edition, an unforgettable dining experience that paid homage to the rich flavors and traditions of North Bali. Commenced on the tropical bliss of COMO Beach Club, this exclusive event was part of a bigger initiative to elevate indigenous Balinese goodness in a truly authentic and classy way.

'Arak' Cocktails and Enchanting Live Gamelan
Our journey began with handcrafted cocktails at a vibrant stall created in collaboration with Gwan Gwan Hoo, a legendary arak distillery from Buleleng. Their trio of signature creations—Segara Mekalas, Taman Lovina, and Darma Gula—each infused with local botanicals like tamarind and torch ginger, offered a refined sip of North Bali’s ceremonial spirit. As the sun set, live Gamelan music and Balinese dance by Gita Semarakanti transported us into a magical Balinese atmosphere with its enchanting rhythms.
The Elevated Buleleng Goodness
Then came the main event: a nine-course culinary showcase by Executive Chef Kadek Sugiantara. His menu was a heartfelt tribute to traditional Buleleng recipes—think grilled squid in coconut salad (Lawar Kenus), smoky turmeric octopus (Serapah Gurita), and delicately spiced barracuda wrapped in banana leaves (Pepes Ikan). Each dish felt like a love letter to Bali’s northern coast, made even more memorable with fiery sambals and a sweet finish of Daluman—grass jelly with smoky coconut milk and jackfruit.

What truly stood out was how the evening wasn’t just about food—it was about storytelling. Every dish carried memory, meaning, and the essence of old Bali.
