An evening of contemporary Cantonese cuisine and Chilean wine recently unfolded high above Bandung at The 18th Restaurant & Lounge, located on the top floor of The Trans Luxury Hotel Bandung. Titled The Art of Terroir: A Contemporary Cantonese Wine Dinner, the exclusive evening brought together modern Cantonese cuisine and a curated selection of wines from Chile's historic winery, Viña Tarapacá.
Held on June 9, 2026, the event marked the first collaboration of the year between The Trans Luxury Hotel Bandung and The Peak Connoisseurs. Guests were invited to explore the concept of terroir through a five-course dining experience, where each dish was thoughtfully paired with a wine chosen to complement its flavors and character.

Leading the culinary journey was Executive Chinese Chef Engoi Chee Hing, whose contemporary approach to Cantonese cuisine took center stage throughout the evening. The menu showcased a balance of traditional techniques, premium ingredients, and modern presentation, creating a dining experience designed to highlight both the food and the wine.

The evening opened with The Companion Platter, featuring a trio of bites including Crispy Fried Oyster, Foie Gras Siomay topped with Avruga Caviar, and Pan-Fried Kimchi Salmon Dumpling. Paired with Viña Tarapacá Chardonnay 2022, the course introduced guests to the fresh and vibrant notes that would define the start of the dinner.

The next course featured a Double-Boiled Pigeon Consommé infused with sea cucumber, pear, and dried fig. Rich yet delicate, the soup was accompanied by a glass of Viña Tarapacá Gran Reserva Pinot Noir 2022, creating a pairing that highlighted both depth and elegance.

For the seafood course, steamed grouper was served with Nyonya sauce, bringing together classic Cantonese cooking techniques and Southeast Asian flavors. The dish was paired with Viña Tarapacá Sauvignon Blanc 2022, known for its crisp and refreshing profile.

One of the standout courses of the evening was the Wagyu Fried Rice. Prepared over high heat and finished with Chef Hing's signature XO Sauce, the dish was paired with Viña Tarapacá Gran Reserva Etiqueta Negra Cabernet Sauvignon 2021, one of the winery's flagship labels. The combination offered a richer and more robust contrast compared to the earlier courses.

To end the experience on a sweet note, guests enjoyed Mango Moon Ball alongside Chinese Yam Ice Cream, bringing a refreshing finish to the five-course menu.
Beyond the menu itself, The Art of Terroir highlighted the growing interest in curated food and wine experiences in Bandung. The collaboration also welcomed Felipe Meneses, Export Manager of Viña Tarapacá, who joined the evening alongside culinary enthusiasts and invited guests.

The partnership between The Trans Luxury Hotel Bandung and The Peak Connoisseurs is also set to continue. During the event, organizers revealed plans for another ambitious dining experience that will pair Indonesian cuisine with a prestigious wine from Bordeaux, France. While details have yet to be announced, the upcoming collaboration is expected to offer another unique culinary experience for Bandung's food and wine lovers.
