Renaissance Bali Nusa Dua Resort, a Bali Nusa Dua 5-star hotel, is delighted to welcome Ashwani Mall as the new Indian Chef, bringing with him a wealth of experience and a deep passion for authentic Indian cuisine.
Born and raised in New Delhi, India, Chef Ashwani began his culinary journey at several renowned Indian restaurants in the city, including Varq Indian Restaurant at the iconic Taj Mahal Hotel and Fire Indian Restaurant at The Park Hotel. These early experiences laid a strong foundation for his mastery of traditional Indian flavors.
With over 25 years of experience in five-star hotels, Chef Ashwani is no stranger to Marriott International. His journey with the brand began in 2016 at The Westin Pune, where he served as Chef de Cuisine at Kagan Indian Restaurant, sharpening both his culinary expertise and leadership skills. In October 2019, he broadened his international exposure by relocating to Indonesia, joining Handi Indian Restaurant at Le Méridien Jakarta, where he continued to elevate Indian culinary offerings until October 2024.
In November 2024, Chef Ashwani continued to expand his culinary journey in Bali, contributing his expertise to several renowned Marriott International properties, including Elements by Westin, Renaissance Bali Uluwatu, Four Points by Sheraton Bali, and Sthala Ubud, a Tribute Portfolio Hotel, prior to joining Renaissance Bali Nusa Dua Resort.
With extensive experience across Marriott International’s diverse portfolio of brands, Chef Ashwani is known for blending traditional Indian flavors with contemporary presentation while maintaining authenticity. His expertise is to deliver exceptional Indian catering experiences, whether for MICE events, weddings, or bespoke celebrations, ensuring memorable culinary journeys for every occasion.
Outside the kitchen, this warm and personable chef enjoys watching movies, listening to music, and exploring new destinations.
