Over the past nine years, Seasalt at Alila Seminyak has established itself as one of Bali’s best‑loved destinations for ingredient-driven cooking and a close connection to the sea. To mark its ninth anniversary, Seasalt presents a two‑day culinary collaboration with Alila Villas Uluwatu on May 16 and 17, 2026, bringing together two Alila destinations through a shared focus on locally sourced ingredients, charcoal grilling, and relaxed coastal dining.


For this collaboration, Executive Chef Kadek Sugiantara of Alila Villas Uluwatu presents a selection of signature dishes at Seasalt, showcasing the bold Indonesian flavors and grilled specialties emblematic of the clifftop resort. Leading the experience, Chef Hazwan Hamdan of Seasalt Seminyak brings the collaboration to life through his distinctive approach, guided by his deep understanding of the resort’s culinary philosophy.

 


The celebration begins on May 16 with a sunset hour experience and flows into the anniversary dinner from 5 PM to 10 PM. Set against Seminyak’s evening coastline, the experience features sunset bites, and an à la carte selection from Alila Villas Uluwatu, centred on grilled seafood, locally-sourced spices, and dishes designed for sharing.


Highlights include satay campur featuring chicken satay, satay lilit ikan, Wagyu M3 beef satay, and pork belly skewers, all served with peanut sauce and an array of sambals. The menu continues with bold main courses such as ikan bakar dabu dabu, a grilled catch of the day paired with Manadonese chilli salsa, and iga bakar babi kecap, chargrilled pork ribs accompanied by curried cassava leaves and Chef Kadek’s signature “sambal setan”. Dessert concludes with puding kelapa, an Indonesian coconut caramel flan complemented by rum and raisin ice cream. Guests who wish to explore beyond the collaboration menu may opt for selections from Seasalt’s regular à la carte offerings.


On May 17, the celebration continues with Seasalt’s iconic Coastal Brunch from 12 PM to 4 PM. Guests can also enjoy live grill stations showcasing Uluwatu Signature selections and culminate the experience with a Whole Grilled Seabass Dabu Dabu.


The brunch features fresh seafood on ice, dry‑aged sashimi, seafood maki rolls, Wagyu short rib with Kalimantan black pepper, laksa with octopus and vermicelli, and baked oysters, complemented by Indonesian and Asian‑inspired side dishes and salads. Accompanied by live entertainment from Lamented Laughter, the anniversary brunch unfolds at an unhurried pace by the ocean, reflecting the relaxed and soulful dining style that has defined Seasalt since its beginnings.


“Over the past nine years, Seasalt has become a place guests return to for both the food and the atmosphere that surrounds it,” says Dante Rossi, Director of Food & Beverage. “Celebrating this anniversary with Alila Villas Uluwatu feels especially fitting, as both destinations share a strong respect for local-sourced ingredients and local culinary traditions.”


The celebration begins with sunset hour and an anniversary dinner at Seasalt on May 16, 2026, from 5 PM to 10 PM, and continues with the Coastal Brunch on May 17, 2026, from 12 PM to 4 PM. The brunch is priced at IDR 650,000++ per person.
