In celebration of the Ubud Food Festival’s 10th anniversary, Roso Restaurant is proud to announce its participation in this year’s event, themed “Heritage.” As part of the festival’s vibrant three-day program, Chef I Ketut Gede Arya Prima Udayana, Executive Sous Chef at The Meru Sanur and Bali Beach Hotel The Heritage Collection, will host a special cooking demonstration on Saturday, 31 May from 10:00 to 11:00 AM at Teater Kuliner, Taman Kuliner, Ubud.

 

In this special session, Chef Prima presents one of Roso Restaurant’s signature dishes, Dendeng Basah Balado, featuring spicy wagyu short ribs grilled with kaffir lime and chili, served with two traditional condiments: Jantung Pisang (banana blossom sautéed with chili and shallots) and Jagung Nangka Muda (a blend of corn and young jackfruit with garlic, candlenut, coriander, and cardamom). These two accompaniments are inspired by recipes from the historic Mustika Rasa cookbook, a cultural initiative led by President Soekarno to preserve Indonesia’s culinary heritage. Prepared with locally sourced ingredients and authentic Indonesian spices, the dish reflects Roso’s commitment to reviving heritage recipes through refined technique and thoughtful storytelling.

This showcase reflects the very spirit of UFF’s “Heritage” theme, honoring Indonesia’s culinary past while reimagining it for today’s tastes. The session will conclude with a tasting experience, inviting festival-goers to savor the deep, complex flavors of these timeless dishes.
