Waatu Unfiltered: A Natural Wine Dialogue brings together a curated selection of low-intervention wines, guided by instinct rather than control. Supported by Toto Wines, a curator of expressive producers who embrace minimal interference and honest craftsmanship. Each pour tells its own story of soil, season, and the hands that chose to do less, not more.

Paired with a thoughtfully composed four-course menu, the experience moves in rhythm with the wines. Layered, honest, and deeply connected to its elements.

Set on the South Lawn, as day softens into evening, the dialogue unfolds slowly. Between glass and plate, between fire and fermentation, between what is made and what is allowed to become. The evening celebrates a shared philosophy: purity over perfection, character over convention.
