RE-OPENING BIG FISH GRILL

The Stones – Legian, Bali – Autograph Collection is announcing the re-opening of our signature restaurant, Big Fish Grill. With Chef Danny’s background in BBQ, he has designed his unique signature dish for the Stones Hotel. His vision of Big Fish Grill is geared towards a shared-style menu. The newly updated menu that he curates will include a Jimbaran-style grille fish, various types of Tapas, Texan-style steak, and Peruvian Ceviche. These dishes will be using Bali’s finest local and imported ingredients to elevate the culinary offerings and entertain the palate of all food lovers.

With the introduction of our new dishes at the Big Fish Grill, Chef Danny has curated a number of entrees to tickle your taste buds which we named it Starters to Share. Guests are able to choose from Burrata Cheese (Fire Roasted Pepper Puree, Marinated Tomatoes, Pine Nut, Vinaigrette), Fire Roasted Octopus (Smoked Tomato Jam, Garlic Aioli, Chimichurri), Hand Cut Prime Steak Tartare (Mustard, Shallot, Truffle, Egg Yolk, Crisp Bread), Line Caught Wahoo Crudo (Orange, Radish, Shallot, Citrus Soy Vinaigrette), Yellow Fin Tuna Tartare (Cucumber, Avocado, Bonito Flake, Yuzu Dressing), Crab Cakes (Charred Corn Relish, Lemon Aioli), Pickled Mushroom Salad (Asparagus, Citrus, Nori, Sesame Seed, Crisp Greens, Miso Dressing) and Charred Baby Romaine Hearts (Parmesan Aioli, Shaved Parmesan, Croutons).

For its shared style menu set, Chef Danny has prepared a selection called Larger Plates starting from Roasted Barramundi (Cauliflower Puree, Marinated Vegetables, Lemon), Marinated Free Range Half Chicken (Baby Carrot, Potato Puree, Roast Shallot, Chimichurri), Slow Cooked Australian Rack of Lamb (Spiced Pumpkin Hummus, Minted Crushed Peas, Jus), Spiced Cauliflower Steak (Romesco Sauce, Marinated Tomato, Pickled Onion), Red Snapper (King Prawn & Clam Stew, Smoked Pepper Jam, Aioli) and Australian Wagyu Beef Burger (Cheddar, Caramelized Onion, Pickle, Crisp Lettuce, Tomato, Secret Sauce, Toasted Bun, Chips).

From The Josper; a charcoal oven a selection of Grade-A beef from Australia and the USA can be grilled to the guest's liking. All steaks are accompanied by Potato Confit, Smoked Pepper Jam, and Roasted Shallots and complimented with a Choice of Sauce. The selection consists of Australia Grain Fed Black Angus, Ribeye, Striploin, and Tenderloin in various sizes, Stockyard Wagyu Striploin MBS 8+, and it's famous USDA Prime Black Angus Bone-in Ribeye that can be shared between 2 to 3 people.

No meal is complete without its side dish, and for that, we have For the Table available options include Roasted Broccoli (Seaweed Butter, Chilli), Cucumber & Tomato (Blue Cheese, Red Wine Vinaigrette), Roasted Garlic Mashed Potatoes (Salted Butter, Chive), Arugula Salad (Shaved Parmesan, Pine Nuts, Balsamic), Crisp Potato Wedges (Sea Salt, Garlic Aioli), Charred Asparagus (Miso, Bonito, Sesame Seeds, Lemon).

To accompany the steaks, the chef has prepared special sauces starting from Bearnaise, Black Peppercorn, Chimichurri, and Port-Wine Mushroom.

To end the meal, our Sweets selections, we have our very own Coconut Cheesecake (Pickled Strawberry, Blueberry, White Chocolate Crumble, and Raspberry Puree), Mille Feuille (Matcha Green Tea Cream, Mango, Lychee, and Dragon Fruit Sponge), Pear Almond Tart (Hazelnut Crumble, Honeycomb Tuile, and Vanilla Gelato) and a Sliced of Seasonal Fruit Platter.
