
Building on the success of its inaugural series, The Westin Resort Nusa Dua, Bali proudly presents Travelogues of the Archipelago – Season 2, a continuing culinary journey that celebrates Indonesia’s rich regional heritage through collaborations with acclaimed restaurants and culinary talents from across the country.
Opening Season 2, Ikan Restaurant & Bar will host a special three-day showcase featuring TAMU Restaurant and OSMO Bar Jakarta, both part of TOMA Group, from 2 to 4 April 2026. The event brings the soulful flavors and contemporary spirit of Betawi cuisine from Jakarta to Bali, offering guests an immersive dining and beverage experience rooted in culture, craftsmanship, and storytelling.
For this kitchen takeover, Chef Arief Rachman of TAMU Restaurant will present his signature Betawi specialties — dishes that honor Jakarta’s culinary identity through bold spices, comforting textures, and time-honored techniques. From classic preparations to refined interpretations, the menu reflects Betawi cuisine as both deeply traditional and confidently modern.

Complementing the culinary experience, the bar takeover will be led by Azzabella “Bella” Putri from OSMO Bar Jakarta. OSMO is recognized for its inventive Bastardized Classics and a bold, contemporary approach to mixology. Inspired by local flavors and refined with modern techniques, OSMO’s cocktails are crafted to elevate the dining journey while providing a vibrant counterpoint to the richness of Betawi cuisine.
In addition to the takeovers, guests will also be invited to explore a specially curated à la carte menu, collaboratively crafted by Chef Mohamad Raviel of Ikan Restaurant and Chef Arief Rachman. The menu features 18 dishes in total — nine creations from each chef, bringing together two culinary perspectives in a thoughtful interpretation.
