William Wongso – The Keeper of Legacy
Indonesian culinary icon William Wongso unveils a “private archive dish” inspired by heritage recipes once reserved for royal and historic circles. Refined through decades of research, his creation will be presented at CasCades in a rare, never-before-commercialised interpretation.
Guests can look forward to iconic dishes such as Rendang Beef Cheek and Sate Babi Maranggi, showcasing Wongso’s mastery in preserving Indonesia’s culinary legacy with depth and elegance.
Jovan Koraag – The Fire & Modern Identity
Fresh from receiving recognition at the Tatler Best Awards, Chef Jovan Koraag of Mata Karanjang pushes Indonesian flavours into bold modern expressions through a fearless interplay of fermentation, fire, and sharp acidity, creating dishes that feel familiar yet strikingly more intense and layered.
His courses include vibrant plates such as Fruity Gohu, the fiery Tuna Belly Rica-Rica, and the richly spiced Woku Ayam Sayur Pangi, bringing modern energy to Indonesia’s traditional soul.

Leading the culinary team at CasCades, Chef Gerry Nainggolan brings his craft following experience at various acclaimed restaurants and resorts, most recently at NIHI Sumba. Chef Gerry elevates Indonesian comfort dishes with quiet technique and refined extraction, creating flavours that feel familiar at first, until the depth of smoke, rempah, and memory unfolds.
His contribution includes comforting yet elevated creations such as Palu Mara Ikan, Emping Rujak Mangga, and Nasi Bakar Teri Wangi Rempah, a tribute to Indonesia’s everyday flavours transformed into fine dining storytelling.

Sustainability & Cultural Collaboration
As part of Viceroy Bali’s commitment to responsible hospitality and community empowerment, Table of Three will feature a meaningful collaboration with Yayasan Cahaya Mutiara Ubud, a local disability community foundation.
Guests will be welcomed with a live rindik bamboo performance, followed by a curated display of beautiful paintings exhibited in the restaurant. This collaboration creates valuable cultural exposure for the artists while enriching the guest experience with authentic Balinese artistry and tradition.
