This October, Mozaic Restaurant Ubud invites guests to embark on a culinary journey. In a special event titled From Bali to Beyond: Flavours of the Archipelago, two celebrated chefs— Blake Thornley and Will Meyrick—will share one stage for an evening of creativity, collaboration, and extraordinary flavors. This exclusive evening will feature six courses unfolding through three dining environments—each course a passage to the next, where contemporary thinking meets ancient practice: pickling, ageing, curing, and the enduring ritual of cooking over fire and coals.
Chef Blake Thornley’s culinary path has taken him across the globe – from stages at Charlie Trotter’s in Chicago, The Square in London, and Michael Mina in Las Vegas, to leading some of Asia’s most acclaimed restaurants. After years of success in Shanghai with the OHA Group, Blake returned to Bali as Chef/Co- Owner of Mozaic, where he continues to redefine fine dining by combining sustainability, creativity, and Indonesia’s finest seasonal produce.
Joining him is Chef Will Meyrick, a name synonymous with Asia’s vibrant street food culture. Known as the “Street Food Chef,” Will has built a culinary empire with restaurants like Buzo, Billy Ho, Mama San, Hujan Locale, and Honey & Smoke. His style celebrates the flavors of Asia’s streets while weaving in contemporary flair, creating dishes that speak to both tradition and modernity.
Together, the two chefs will collaborate to bring their creativity, expertise, and passion for authentic flavors to the table. The result: a tasting menu that blends tradition with modernity, showcasing the richness of Indonesia’s archipelago through an elevated fine dining experience.
