Tavolo Group proudly announces the opening of its latest venture: SHUN - Omakase Counter. SHUN is an exclusive 18-seat omakase experience, where time-honored Edomae traditions meet with innovative artistry and seasonal ingenuity, converging into an immersive journey of Japanese culinary excellence. With SHUN, Tavolo Group continues its tradition of elevating dining experiences, adding a unique gem to Bali's gastronomic landscape.

Omakase-style dining - SHUN celebrates the age-old Japanese tradition of 'Omakase', a culinary philosophy expressing the unspoken connection between a chef and their guests. Translating to 'I leave it up to you', guests at SHUN are invited to sit at the counter and entrust the entire menu to the chef's hands. The chef leverages this flexibility to craft a daily-changing, ingredient-led menu, designed around the finest seasonal ingredients and the chef’s creative impulse.

Neo-Edo Culinary Artistry - Leading SHUN's Omakase journey is Chef Mark Jeremie Oliver, a seasoned expert with years of experience in Japanese cuisine and Omakase-style service, renowned for weaving tradition with innovation on the plate. Mark and his team are classically trained, following the century-old Edomae sushi's tradition, but they like to respectfully challenge this tradition with a creative touch, infusing it with contemporary influences, innovative techniques, and unconventional flavors, etc.

An immersive, exclusive experience - The essence of the SHUN dining experience is captured at the 8-seat only counter, where guests have the option to choose between a 14 and 19-course Omakase menu. This setting allows for an engaging blend of chef showmanship and personalized interaction with guests, creating a unique and immersive dining experience. For those who value choice and privacy, SHUN also provides an intimate 10-seat enclave, offering an à-la-carte dining alternative.
