As we stepped foot into the newly reopened Mozaic Ubud, we were instantly captivated by the enchanting atmosphere that surrounded us. After an 11-month closure due to the global pandemic, Mozaic had transformed into something even more remarkable, helmed by Chef Blake Thornley, a long-time partner of Chris Salans. With a new concept that seamlessly blends the old with the exciting elements of the new, Mozaic Ubud now offers three distinct dining experiences under one roof. We had the privilege of experiencing this elevated face of Mozaic and indulging in its finest gastronomic menus.

A Journey of Culinary Discovery

From the moment we entered, it was evident that Mozaic Ubud had undergone meticulous attention to detail. Intricate pathways, including staircases, gardens, and ponds, connected all the dining venues, immersing us in a true culinary journey rather than just dining at a fine establishment. The restaurant's interior design was a testament to its commitment to providing a unique and immersive experience.

Three Distinct Dining Experiences

Mozaic Ubud now offers three distinct dining experiences, each catering to different preferences and culinary desires.

The Tasting Rooms

Tasting Rooms

Nestled within a meticulously renovated space, Tasting Room is ready to entice guests with its state-of-the-art open kitchen, proudly powered by Nayati. As you step inside, your senses are immediately captivated by the walk-in wine room, brimming with an impressive selection to enhance your dining experience. The ambiance is set to perfection, with a full bar ready to craft enticing cocktails for your pleasure. Tasting Rooms believe in simplicity elevated to perfection, fusing high-end ingredients with a delightful blend of international flavors and authentic local Indonesian touches that pays homage to the renowned culinary heritage of Mozaic. This dining space opens from 12:00pm daily.

The Dining Room

The newly air-conditioned Dining Room is nestled amidst the tropical garden of Mozaic, continuing its legacy of serving renowned tasting menus. The restaurant offers an unforgettable fine dining experience and is open daily from 6:00 pm until 10:00 pm.

The Chef's Table

As a part of Mozaic's meticulous Workshop, Chef's Table offers an exclusive dining experience that transports you to a world where creativity knows no bounds. Prepare to be captivated as a dedicated team of skilled chefs take center stage, their culinary prowess on full display as they work their magic live, right before your very eyes. Every Wednesday to Sunday, the Chef's Table beckons you to indulge in a symphony of flavors, where each dish is a work of art meticulously crafted to perfection. The restaurant will only serve dinner with the 1st seating at 7:00 pm and the 2nd seating at 8:00 pm. 

These three dining spaces are meticulously arranged to let the guest have a holistic culinary experience. They can start at the Tasting Room, which is located right after the restaurant’s entrance, before continuing to the Dining Room in the middle of the venue’s precinct. Then, if they still crave a more exclusive experience, they can head to the Chef’s Table at Mozaic Ubud’s deepest area.

During our visit, we were treated to a delightful gastronomic lunch at The Chef's Table, where Chef Blake Thornley showcased his culinary expertise through a series of meticulously crafted dishes. The Kingfish Ham, a combination of kaffir, radish, gazpacho, and tomato granita, delighted our palates with its harmonious flavors. The Slipper Lobster, blending fresh lobster slices with pomelo lard, fennel, and kenari (walnut), was a unique and unforgettable creation. The Foie Gras, an exquisite blend of the iconic ingredient with smoked eel, apple, and lemongrass, left us in awe of its creativity. The Kemangi Mousse, presented with Valrhona white chocolate, turmeric sorbet, and burnt butter, was a stunning finale to our gastronomic journey. Each dish was thoughtfully paired with signature cocktails, aptly named 'Smoky' and 'Surf,' adding an extra layer of complexity to the overall experience.

Chef Blake Thornley's Passion

Chef Blake Thornley, with his impressive culinary background, brings a wealth of creativity and cooking passion to Mozaic Ubud's evolution. Having honed his skills at renowned establishments such as Charlie Trotter's in Chicago and OHA Group in Shanghai, he showcases his commitment to locally-sourced, seasonal ingredients and unique flavors while emphasizing the integrity of each ingredient. With the introduction of the new Tasting Rooms, Chefs Blake and Chris open the Mozaic experience to a new direction, appealing to a broader audience of fine dining enthusiasts.
