
Hanging Gardens of Bali, the iconic jungle sanctuary, is proud to present its newest culinary signature: Rasa Masa – a ten-course tasting experience created to honor the past and imagine the future of Indonesian cuisine. Taking its name from the Indonesian words for “flavor” (rasa) and “time” (masa), Rasa Masa is a tribute to both heritage and evolution. Curated by Executive Chef Ridwan, the experience reflects a deep respect for the archipelago’s diverse culinary traditions—infused with a contemporary sensibility that speaks to the modern gourmet.
Each course is a chapter in a sensory narrative. Ancient spice trails are revisited, forgotten village recipes revived, and humble ingredients reinterpreted with bold technique and imagination. From Bali’s highland produce to the spices of Sulawesi and the seafood of Eastern Indonesia, the menu traverses geography and history alike. Dishes such as coconut ash smoked lobster, jackfruit confit with tamarind jus, and fermented rice sorbet are paired with artisanal beverages and served in a rhythm designed to mirror ceremonial rituals—slow, intentional, and profoundly rooted.
The ambiance of Three Elements Restaurant enhances the journey: perched above the Ayung River Valley, surrounded by jungle mist and candlelight, it is the perfect stage for a dining experience that is both soulful and sophisticated.
