Chef Blake Thornley is set to take the fine dining restaurant to a new height 

Two years after its grand reopening, Mozaic has soared to new heights under the leadership of celebrated Chef Blake Thornley, now Chef and Co-Owner. With his exceptional talent and vision, Chef Blake infuses fresh energy and creativity into every dish, skillfully blending modern techniques with the restaurant's rich legacy. His culinary mastery breathes new life into Mozaic's menu, creating an elevated dining experience that stays true to its roots while embracing innovation. 

Chef Blake's connection with Mozaic runs deep. Hailing from Christchurch, New Zealand, he embarked on his culinary journey at the tender age of 11. Fostering his love for cooking and innovation, this unassuming individual has left his mark on esteemed establishments like Charlie Trotter's in Chicago. His path led him to Mozaic, where he served as the head chef under the mentorship of Chef-Founder Chris Salans over a decade ago. It was here that he honed his craft, developing recipes that celebrated local customs, global influences, and distinct flavors. 

In 2016, Chef Blake departed Mozaic to sharpen his culinary expertise with Shanghai's renowned OHA Group. He launched OHA Eatery and other concepts there, focusing on seasonal Chinese ingredients and organic wines. He also revitalized the iconic Blackbird restaurant, introducing a rooftop edible garden and an exclusive second-floor Chef's Table experience called Table Black. 

After several successful years in Shanghai, Bali's vibrant culinary scene beckoned him back. With a passion for breathing new life into Mozaic Ubud following its pandemic closure, Blake returned as Chef and Co-Owner, determined to lead the restaurant into a new era. 

Now at the helm of the new Mozaic, Blake blends his mastery with an innovative vision, opening an exciting new chapter while honoring Mozaic's roots. His approach celebrates the finest Indonesian spices, ingredients, and seasonal products through a sustainable gastronomic lens. Under his leadership, Mozaic reaffirms its place among Bali's top-tier fine dining establishments, continuing to set the standard for culinary excellence. 

Mozaic proudly unveils its reimagined dining concept, transforming into both a fine dining restaurant and a must-visit culinary destination in the heart of Ubud. Under the visionary leadership of Chef Blake, Mozaic now offers an array of unique dining experiences: 

  • The Dining Room: Indulge in an unforgettable fine dining journey at The Dining Room, where every moment is a seamless blend of elegance and culinary artistry. Begin your experience at The Tipple Room with curated cocktails and light bites, setting the tone for an exceptional evening. Transition to the main dining room for a Mozaic dinner that delights the senses, followed by a serene finale in the garden, where wine flows and the night lingers. Each dish at The Dining Room is a gastronomic masterpiece, meticulously crafted from locally sourced ingredients and infused with creativity and passion, promising a dining experience that transcends the ordinary. 

  • Tipple Room by Mozaic: This lively, casual dining space centers around the bar, where expertly crafted seasonal cocktails shine, each inspired by local flavors. The remarkable cocktails are created by Bili Wirawan, Mozaic’s creative mixologist who recently just won Best Restaurant Mixologist of the Year 2024 award presented by Les Grandes Tables du Monde. The Tipple Room also features a walk-in wine cellar with an extensive selection, perfectly paired with an enticing menu of a la carte dishes and a must-try set lunch. At the heart of the space is a new open kitchen powered by Nayati, where talented chefs prepare every dish with flair and precision. 

  • Chef’s Table: For an exclusive, immersive dining experience, the Chef’s Table offers guests the rare opportunity to witness live culinary artistry. Since its inception in 2001 by renowned chef Chris Salans, Mozaic has risen to become one of Bali’s most celebrated fine dining establishments, revered for its innovative use of local ingredients and artful presentation. Over the years, Mozaic has garnered numerous prestigious accolades, including the Hospitality Asia Platinum Award for Most Innovative Restaurant, a coveted spot on Asia’s 50 Best Restaurants 2013, Top Asian Restaurant at the World Gourmet Summit 2017, and the Wine Spectator Award of Excellence in both 2017 and 2018.
