Perched above the dramatic cliffs of Uluwatu, where sweeping ocean views meet understated elegance, CIRE at Alila Villas Uluwatu welcomes Santanera Bali for a special two-night collaboration on 19 and 20 June 2026. 

For two evenings only, guests are invited to discover Santanera’s vibrant culinary identity at CIRE through a specially curated à la carte menu featuring the restaurant’s signature dishes and bold Latin-inspired flavours. Savour Santanera’s creations through a personalised selection at the table. Santanera is recognised for its dynamic cuisine that blends Colombian heritage, global influences, and Bali’s exceptional local produce into an engaging culinary journey rooted in connection and discovery. 

Known for its expressive flavours and open-fire cooking techniques, Santanera brings its signature approach to Uluwatu, presenting dishes that highlight fermentation, chargrilling, fresh seafood, and locally sourced ingredients, all reimagined through a contemporary Latin American lens. Set against the serene backdrop of the Indian Ocean, CIRE offers a refined coastal setting for the collaboration, creating an atmosphere where guests can enjoy Santanera’s menu while immersed in the relaxed sophistication of  Alila Villas Uluwatu. 

Highlights from the collaborative menu include Caribbean Curried Spanner Crab with brown butter and toston, Scallop Tostada with green sambal and tarama, Carrara Wagyu Intercostal with salsa roja and rice arepa, Char-Grilled Octopus with cabbage and chili lemon emulsion, Dry Aged Duck with charred kale and caramelized yogurt, and Wagyu Brisket with tomatillo escabeche and breadfruit purée. The menu concludes with vibrant desserts such as Passion Fruit Sorbet with mango granita and Churros with dark chocolate, vanilla ice cream, and dulce de leche. 

More than a dining collaboration, the pop-up celebrates a shared philosophy between the two destinations: meaningful culinary moments inspired by culture, craftsmanship, and a strong sense of place.
