Oliverra Tables, the collaborative dining series at Umana Bali, LXR Hotels & Resorts, returns for its fourth edition with an expressive new chapter led by guest chef Silverio Martinez and Pablo Prieto, winemaker of Viña Carmen. Taking place on Saturday, 23 May 2026 from 6:00 PM onwards, the one-night-only experience presents a six-course, four-hands dinner that brings together the bold spirit of Mexican cuisine, Oliverra’s refined culinary style, and a curated wine journey from one of Chile’s most respected wine houses.
Held at Oliverra, Umana Bali’s signature clifftop restaurant and bar, the evening continues the restaurant’s vision of welcoming distinctive culinary voices into one kitchen. This edition explores a meeting point between depth, brightness, fire, finesse, and terroir, as each course moves between Chef Silverio’s Latin roots and Oliverra’s contemporary approach to Mediterranean dining. Elevated by pairings from Carmen Wines, the dinner is designed as a layered conversation between food and wine, with each pour selected to bring added clarity, structure, and discovery to the menu.

“Oliverra Tables was created to invite new energy and perspective into our kitchen, while staying grounded in the spirit of Oliverra,” said Ngurah Putra, Executive Chef at Umana Bali. “This collaboration with Chef Silverio and Pablo Prieto brings together three different expressions of craft. What makes it exciting is the balance. There is boldness, but also restraint. There is storytelling in every course, but it is delivered with precision and purpose.”
Chef Silverio Martinez brings more than 23 years of international culinary experience to this edition of Oliverra Tables. Originally from Mexico and now based in Indonesia, he is known for his expressive approach to Latin cuisine, shaped by leadership roles across international hospitality brands and a strong commitment to cultural authenticity.
“This dinner is about sharing the vibrancy of Mexican flavors in a way that feels thoughtful and balanced,” said Chef Silverio Martinez. “Together with the Oliverra team, we have created a menu that respects both identity and harmony.”

Joining the evening is Pablo Prieto, winemaker of Viña Carmen, whose experience across Chile, the United States, and France informs a contemporary approach rooted in terroir and character. Since joining the winery in 2022, he has helped shape wines with a strong sense of identity.
“Each pairing was selected to bring greater depth and clarity to the menu, while allowing every dish to remain the focus,” said Pablo Prieto, Winemaker of Viña Carmen. “For this dinner, we selected wines that could bring clarity, texture, and depth to each course, while still allowing the food and the story behind it to remain at the centre.”

• Costa de Mexico featuring fresh tuna marinated with chili oil macha sauce on black corn tostada, paired with Carmen Frida Kahlo Reserva Rosé 2022
• Taco with octopus al ajillo, chipotle aioli, caramelized onion, bone marrow, and soft corn tortilla, paired with Carmen Grand Reserva Chardonnay 2020
• Sambuca Glazed Smoked Duck Crown with pomme soufflé, santang, honey, kalamata olive, and black truffle, paired with Carmen Grand Reserva Syrah 2018
• Yabbies en Croute with fermented black shallot, peperonata sabayon, and fennel bouquet, paired with Carmen Grand Reserva Cabernet Sauvignon 2020
• Beef Barbacoa with slow cooked Wagyu beef ribs, dried guajillo chili adobo, grilled carrot purée, and salsa verde, paired with Ijo by Carmen Delanz Alto Jahuel 2020
• Citrus & Rhubarb with bergamot curd, rhubarb confit, and basil semifreddo, paired with Carmen DO Loma Seca Cinsault 2020
